Amy Riolo: Hi, I am Amy Riolo and today, I am working in the kitchen at Sur La Table in Arlington, Virginia. We are going to be making homemade Italian Sauces. We are going to make a basic Tomato Sauce, a Basil Pesto Sauce, an Alfredo Sauce, a Pink Sauce with Arugula and a Garlic Oil and Chili Sauce.

As we make each sauce today, we will be going through with a list of equipment and ingredients that you will need for each recipe but keep in kind that they are very simple and each recipe takes very few ingredients and common kitchen equipment which you probably have already in your own home and before we will get started, I would like to remind everybody that safety is always important.

Please keep in mind that we are going to be using a hot stove and sharp knives, so be careful and always guard children if they are around in the kitchen at the time and let me tell you a little bit about myself. I am a cooking instructor, a cookbook author, a food writer and a restaurant consultant based in the Washington DC area. I specialize in Mediterranean and Middle Eastern Cuisine. I graduated from Cornell University and I got a lot of experience with Italian cuisine when I lived in Italy and also through recipes they were handed down from my family.

So let's get started making our basic Tomato Sauce.
