How to Make Peanut Butter Cookies

Ingredients

2 sticks of butter
1/2 cup of granulated white sugar
1/2 cup of dark brown sugar
2 eggs
4 cups of peanut butter
1 teaspoon of vanilla extracts
3 cups of flour
1 teaspoon of baking soda
Peanut butter cups or chocolate kisses

Instructions

1. Combine the white sugar, brown sugar and butter in a mixing bowl. Add the eggs one at a time. Mix it and add the vanilla.


2. Mix in the peanut butter gradually and then add the flour and baking soda. Mix it thoroughly.


3. Form the peanut butter cookie dough into balls and place them on a cookie sheet. To make a classic peanut butter cookie, press down the edges with a fork. You could also place a Reese's peanut butter cup or a Hershey's kiss in the center.


4. Bake the cookies in the oven for 20 minutes at 350 degrees.

Petra Cox: I am Petra Cox with Mom's Apple Pie Company in Occoquan, Virginia. We had a family on business with a farm and four locations in Northern Virginia. We go lot of our own produced for our pies and quiche, but today I am going to show you how we make our peanut butter treats, one of our most popular cookies that we make here.

I will show you a few different variations in step by step exactly how we make them, so come inside. So here I have set up all of the ingredients we need for our peanut butter cookies and some extra tools that we might be using as well. I have two sticks of butter that is already softened. I am using salted butter and we are going to be adding to that a half cup of granulated white sugar and a half cup of dark brown sugar and two eggs, two whole eggs and then we will have two pounds of peanut butter which is four cups of peanut butter. I am using creamy peanut butter but if you prefer you can use the crunchy peanut butter. You can use anywhere from a teaspoon to a tablespoon of vanilla extracts and I have three cups of flour that I have sifted before measuring and also a teaspoon of baking soda. So the reason you want to sift your flour before measuring is because if you just scoop it right out you can a lot more flour in your measuring cup than if you slightly sifted it in, so it's a really different end result.

So the tools that we will actually be using, I am going to be using a stand mixer, you can also use a hand mixer if you want. That's kind of important for creaming the butter and sugar together because you need a really light result there. I am baking it on a standard like commercial grade baking sheet lined with parchment paper, you can do just a regular cookie sheet at home and grease that a little bit. I use a spatula to, I am scrape up the ingredients in between adding them while I am mixing and a fork to do the sort of classic peanut butter cookie design.

There is also the option of making peanut butter cookies with either a peanut butter cups or chocolate kisses. So we have those available and also an ice cream scoop or a cookie scoop for getting the cookies out of the bowl and on to the tray and one other thing I am going to show you how to do a peanut butter and jelly cookie. I like to use raspberry jelly, you can use whatever kind of jelly that you use on PB&J sandwich and so for that I greased the bottom of a teaspoon and press it into the cookie before baking and then I add the raspberry jam after I have baked the cookie.

So before we get started actually baking our peanut butter cookies, I will let you know that I am a baker with Mom's Apple Pie Company. I have been baking here for a few years and the peanut butter cookies are actually one of our most popular items here. We call them peanut butter treats and we serve them with the chocolate kisses or the Reese's peanut butter cups.
