Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.

This video will show how to make peanut butter cookies and show three variations.
Making Peanut Butter Cookies - Three Variations
Ingredients
2 sticks of butter1/2 cup of granulated white sugar
1/2 cup of dark brown sugar
2 eggs
4 cups of peanut butter
1 teaspoon of vanilla extracts
3 cups of flour
1 teaspoon of baking soda
Peanut butter cups or chocolate kisses
Instructions
1. Combine the white sugar, brown sugar and butter in a mixing bowl. Add the eggs one at a time. Mix it and add the vanilla.
2. Mix in the peanut butter gradually and then add the flour and baking soda. Mix it thoroughly.
3. Form the peanut butter cookie dough into balls and place them on a cookie sheet. To make a classic peanut butter cookie, press down the edges with a fork. You could also place a Reese's peanut butter cup or a Hershey's kiss in the center.
4. Bake the cookies in the oven for 20 minutes at 350 degrees.

Petra Cox: I am Petra Cox, a baker with Mom's Apple Pie Company in Occoquan, Virginia and today I am showing you how to make a delicious peanut butter cookies. So at this point, we have our dough all mixed together by a machine and then I went ahead and scratch the sides down just so that anything that might have been unmixed in the sides is now incorporated into middle and this dough is different from say a chocolate chip cookie or a sugar cookie dough. It sort of it doesn't stay together in quite the same way, partly because of the higher oil and fat content from the peanut butter and it doesn't quite spread out as much as most regular cookie recipes but what I have here is a, it's a cookie scoop or an ice cream scoop with a little release rubber (ph) and I greased it with a little butter ahead a time. So I am just taking a scoop and put it down on there.
Alright and so the way I remember eating peanut butter cookies when I was little was with the little fork print on them. Use a fork to sort of smash the cookie down and then it has sort of crosshatch design on there. So to me that is the classic peanut butter cookie and there is a few other ways to do a peanut butter cookie rather than just the plain peanut butter.
We would like to sell them at the store as peanut butter treats with either Reese's peanut butter cups or Hershey's kisses in them and that way we basically just smash them down with the kiss and the kiss will bake right into the cookie, don't worry it won't melt and turn into molten chocolate. It hold its shape because of other ingredients that are found in that and then they end up looking like this.
So you could exactly the same thing with the Reese's peanut butter cup. Just kind of stick it down there and I will show you another way you can bake your cookies. On the other side of a teaspoon I put some -- I grease the teaspoon with some butter and this way the cookie with bake with a little invent in it that you can put your favorite kind of jam for PB&J cookies.
So when you have all of your cookies on your tray you can then put them in the oven at about 350 for perhaps around 20 minutes. We do it in a convection oven. A commercial convection oven for 250 degrees for around 20 minutes. Home oven should be around 350, nice and preheated so that you don't burn your cookies.
So here we are with our fully baked peanut butter cookies. They have baked for about 20 minutes. They spread out just a little bit. Peanut butter cookies don't spread out as much as a sugar cookie or a chocolate chip cookie. So that is how we make our peanut butter cookies. We made four dozen of them. So get scale down the recipe to suit your needs. You could do it in half and make just two dozen cookies at once. Enjoy your peanut butter cookies.
