Shrimp and Grits Recipe

Peter Tucker: Hi! I am chef Peter Tucker from the Devils Grill Restaurant at Wintergreen Resort in Virginia. Today we are going to be showing you how to make Shrimp and Grits with tasso ham. It's a low country dish and these are the ingredients that you will need.

For the grits, you will need 2 cups of milk, 2 cups of chicken broth, 1 stick of butter,1 cup of stone ground grits, and 3 quarters of a cup of parmigiano reggiano. For the shrimp in sauce you will need 14, 30 to 40 cal shrimp, peeled and de-veined, 3 tablespoons of leek rounds, 2 tablespoons of tasso ham, 2 tablespoons of tomato skins diced, 2 tablespoons of fresh chives, 1 cup of chicken broth, a few shots of Tabasco, and one stick of butter cut into pieces.

Also the tools you will need are one small whisk, a wooden spoon, 1/2 quart saucepot and a saute pan. Please remember that safety is always important and be aware of the fire and boiling liquids on the stove. Let me tell you a little about myself. I came here from Wintersburg, 5 years ago to work at the Wintergreen Resort, the Devils Grill and I became the chef here 2 years ago.
