How to Make Guacamole

Ingredients

1 lemon
2 avocados
cilantro
1/2 a tomato
1/4 of an onion
Salt
Pepper
Olive oil

Instructions

1. Peel the avocados and place them in a bowl. Mash with a fork. Squeeze lemon juice into the bowl and mix.


2. Cube half of a tomato and add it to the bowl. Dice 1/4 of an onion and chop cilantro and add them to the bowl. Season with salt and pepper. Add a dash of olive oil and mix everything together.

Javier Quiroga: Hello, I am Javier Quiroga with To Your Taste Catering and today, we are showing you how to make some wonderful delicious recipes for Latin fiesta. Right now, I am showing you how to make some guacamole.

The ingredients you are going to be needing for this wonderful dish is about one lemon, two ripe avocados, cilantro, one tomato, onion, little salt and pepper and a little bit of olive oil for taste. The materials you are going to be needing is going to be a sturdy cutting board, a very sharp knife, a fork, a spoon. Then you are going to be needing a bowl to be able to mix the avocado.

What I will be making today, will serve about anyway between 4-5 people with two avocados depending on the size. Alright, so we will get started. We have our avocado here. They are a couple of ways that you want to peel an avocado. I will show you the way that I like to do it, that works pretty good actually. You want to grab yours, that's why you need a sharp knife to be able to go through the skin, alright and then you just go all the way round the avocado, one time here. Then you go again here in a quarter, quartering the avocado like this, alright. The moment you do it, now you know if you have got a avocado or not, once you open and see the inside. Look at that, perfectly and beautiful. That's exact color that you want, nice darker here on the outside, a little lighter towards the inside.

Now I showed you guys that I quartered the avocado. The reason being it's easier to peel that way. So you have basically, you have four halves here that you are going to be doing. Everybody peels the avocado differently, but I found in the years experience that I have that this is the easier way for me. Again, you can figure out what works for you. So basically, you grab the tip of avocado and you just peel it right back and the whole avocado comes right out without any problem whatsoever. Okay so you have your full avocado here ready to go.

So we are going to put that right here in our bowl. Again, you can do this. I want you to do a couple of times it come up pretty quickly and you get it ready to go, like that, done. Then once you get to the pit, be careful when you do this part here. You may want to do on the cutting board, hit the pit like that one time and then turn it. So you have the pit here. Then what you want to do is with a rag, just pull it right off. You are set, there is your pit. If you want to save it to plant your avocado tree, it might work, alright. Then you peel them all like that.

We are making this for about 4-5 people depending on the size, also, depending on what else you are going to be serving. If you have a salsa and things like that, that will all be pretty good. Once you have all the stuff in there, what you want to do is just mash it with just a regular fork. You are going to see how wonderful it gets. I like my avocado a little bit chunky, I like the taste there is chunks of avocado and so forth. So if you want it more smooth, you can just keep going and keep mashing it, until it becomes like that.

Now at this point, what you want to do? You want to squeeze a lemon juice in here fairly quickly because what happens with avocado is it starts oxidizing and it starts turning black. You don't want that, it's not going to look very appealing. What I am doing here, I am just basically going to cut this lemon, I turn it like this to get all the juices inside a little bit easier to me to squeeze. So you have your avocado here, get this a little bit out of there. So you have your lemon here, a little bit get away there. The way I wash my hands. So we have that, let me mix this up one time here like this, alright.

We will add a little tomato, a little cilantro, a little onion into that to make it extra, extra good, alright. We are basically going to cube about half of a tomato. You can do this very, very fine, you can do it a little bit chunky or whatever. As I mentioned to you guys before, I like to do my a little bit chunky. I am only using half of the tomato that I have here. Then we are going to use about a quarter onion. There you go, a quarter onion like there for that.

Now before the final touch, in my eyes there is no guacamole if you don't have cilantro, you don't have very good guacamole. So just a quick chop on that. You don't need a lot because cilantro has got a lot flavor but you do want to make sure that you chop it all the way through. You don't want like big sprigs of cilantro in your guacamole. We got that. So we are going to put a little bit of salt in here, a little bit of pepper in there. Now I personally like to put a dash of olive oil, not even about, that's it. It just adds to the flavor of the avocado, it just takes all the other flavors. They just combine there so wonderfully in there.

Now we are going to have them plate this into a nice bowl here. There you have it, there you have your nice homemade guacamole. Next, I am going to be showing you guys how to make a fire roasted salsa.
