How to Make Cocktail Foam to Top Martinis

Ingredients

5 ounces of pasteurized egg whites
5 ounces of chambord
5 ounces of raspberry puree
1 lemon

Instructions

Add the egg whites, chambord, raspberry puree and lemon juice into the canister. Add the lid to the canister and secure it tightly. Screw on the CO2 cartridge. Shake it well. Hold it upside down and add the foam to the top of your cocktail.

Maura Delaney: Hi! I am Maura with Morton's, The Steakhouse. Today, I am going to show you how to make specialty cocktails. Right now, we are going to see how to make our Heavenly Foam.

The tools and the ingredients that we will need to make the Heavenly Foam is the seal to a canister which can be purchased at any home specialty food store, 5 ounces of pasteurized egg whites. You want to use pasteurized egg whites because you don't want to consume raw food. 5 ounces of Chambord, 5 ounces of raspberry puree, and the juice of one lemon. So you want to pour in the egg whites, Chambord, the raspberry puree, the lemon juice. It doesn't have to be in that order. We are going to put the lid on the canister, secure it nice and tight of the CO2 cartridge, screw it on. You are going to hear a slight hiss. There we go. You want to shake it.

When you use the canister, its important to hold it right upside down. Hold it in front of the glass and there we have our Heavenly Foam. Coming up next, we are going to show you how to make the Pomegranate Martini.
