Assembling and Cooking Pizza

Ingredients

(Serves 5-6 people)

Pizza Dough:

2 lbs unbleached flour

1 lb warm water

½ ounce of fresh or dry yeast

½ ounce of fine salt

3 ounces of extra virgin olive oil

Pizza Sauce:

1 can of peeled Italian tomatoes

Pinch of Oregano

Splash of Extra Virgin Olive Oil

Pinch of Salt & Pepper

3 or 4 leaves of Fresh Basil

Toppings:

Fresh Mozzarella

Fresh Grilled Asparagus

Fresh Grilled Baby Artichoke hearts

Black Olives

Smoked Ham

Instructions

Make Dough:

pour flour onto your counter and create a hole in the center. Add yeast and salt into warm water. Mix until yeast is melted into water. Pour water and extra virgin olive oil into the middle of the flour. Incorporate flour into the wet mixture using your hands and a spatula. Knead the dough with both hands until it is smooth. Cover dough with plastic wrap and let it sit until it's doubled it's size

Shaping Pizza Balls:

Cut dough into 8 ounce pieces. Shape the pizza balls and roll on table to create a smooth small ball. Put all the pizza balls on a tray, cover with plastic wrap and let sit over night

Make Sauce:

Crush the whole tomatoes with your hands into smaller pieces. Add salt, pepper, oregano and basil and mix.

Assembling and Cooking Pizza:

Preheat oven to 500 degrees (convection setting preferred) Flour your work surface and begin spreading the dough out using the tips of your fingers from the middle to the outside of the dough. Keep the edges a bit thicker for a crust. Rotate the pizza on the table to expand the dough. Add tomato sauce, fresh sliced mozzarella, grilled asparagus, grilled artichoke hearts, black olives and smoked ham. Use a pizza peal to put your assembled pizza on pizza stone. Put in oven for 5-10 minutes until the crust is brown and the cheese is melted. Finish with a splash of extra virgin olive oil and serve.

Davide Megna: Hello! I am Davide Megna from Amici Miei Ristorante, we are making pizza today. I am going to show you now how to open a pizza dough and top our pizza with all our toppings.

We pull out our pizza dough from the refrigerator, we put it into a container with a little bit of flour. We are going to sprinkle a little bit of flour on our table, put in the pizza dough on our table and sprinkle a little bit of flour on top of the dough.

Now using the tip of our fingers we are going to start shaping the pizza, starting from the middle. Try to make it equally thin, but leaving the edges a little bit thicker from the rest of the pizza. So that will result as a nice thicker edge. Then we start using our hands and rotating our pizza on our table, making sure being careful that not to stretching it too much. So we are not making holes into our pizza. Okay, our pizza is now open. We are going to start putting the toppings on our pizza. We are going to start from the tomato sauce. We are going to add our fresh mozzarella that has been previously strained from excessive water. Then we are going to add our grilled asparagus, some grilled artichoke hearts, some black olives and some smoked ham.

Okay, now we are using our pizza peal to pick up our pizza. We are going to sprinkle a little bit of flour on the pizza peal, so that it would not stick to our peal. We are going to pick up the pizza. In the next step, I am going to show you how we are going to cook our pizza into the pizza oven.

We are cooking our pizza into our wood burning oven. We are going to let it cook for a minute or so, before we start turning the pizza. So that it will cook uniformly in every side. Before we start turning the pizza, we have to lift up part of the pizza to make sure the crust has cooked enough for us to turn it without making any holes into the pizza. Now this is possible, so we are going to turn it on the other side.

Okay, our pizza is almost ready. So it can come out of the oven. Now that our pizza is out of the oven, we are going to finish with some extra virgin olive oil on top. It's all ready to eat, so Bon Appetito, enjoy.
