How to Prepare the Bundt Pan

Jennifer Dalquist: Hi! I am Jenny Dalquist. I work for Nordic Ware and we were talking about How to Bake the Perfect Bundt cake today. Right now we're going to learn how to season your pan properly so that your bundt cake does not stick when you go to remove it from the pan.
There a couple of different things you can grease a pan with. The traditional method is to use butter and then flour the inside of the pan. You can also use vegetable shortening, that works just as well. You still need to flour it after you've done that. But in the last few years there has also been the invention of baking spray with flour in the spray. You have to be careful when you're buying this. You need to read the can and make sure that it's for baking and that the spray contains flour. Because if you just normal vegetable shortening or spray that you would spray out of a can for cooking, it's going to leave a gummy film on the non-stick of your pan and it really makes it a mess to clean up. So you don't want to use that.
Baker's Joy is one brand that we recommend and PAM also make a baking spray. So first we're going to use the baking spray. You are going to want to just coat it. You don't want to get it too thick. You want to use pretty light sprays. So I'd like to do a couple in a couple of intermittent sprays. I'm going to get some inside flute. Make sure you have all the surfaces covered.
Then you want to make sure that it's not pooled up down at the bottom, because that will make a little mushy spots in your cake. So I'm going to take just a simple pastry tree brush and I'm just going to brush out what I sprayed. And it's distributed evenly across the non-stick in the pan. Now this is just a simple bundt shape, but when you start to use more intricately detailed pans, you need to make sure you do this, because it makes a mess if it starts to pool up down in the bottom.
So you can see here I have spread it all the way over the pan in a nice even coat and that's going to insure that the cake doesn't stick when it comes out. You only going to need to season your bundt pan once before we put the batter in and stick the cake in the oven. But for those of you who do not have baking spray with flour at home, I'm going to show you the old traditional method of using butter and flour to coat the inside of your pan and make sure that the cake doesn't stick.
I have about 2 tablespoons of softened butter here and I'm going to use a little piece of paper towel. You can also use your fingers either way will work just as well. So I'm going to put a little bit of butter on here, hold the pan, and you're just going to move it upwards making sure that you're coating all of the different surfaces of the pan.
This is a little bit easier shape to grease this way, because it just has flutes on the inside. But when you use a more intricately detailed bundt pan, this can be quite chore. So sometimes it's much easier to use the spray. You also want to make sure that you're getting the tube in the center. Sometimes that's the trickiest part to get off when you're getting the cake out of the pan.
Now that I have buttered the inside of the pan, I'm just going to take a little bit of my flour, couple of teaspoons worth. We're going to put it inside the pan and you're going to work it around the edges. This is going to coat all of the parts where the butter touched and it's going to insure that your cake turns out just perfectly.
Now if you're baking a chocolate cake or some other dark colored cake, you probably don't want to coat it with flour on the inside, because you're going to get the cake having a light film on the outside of it. So If I'm taking a chocolate cake I'd like to use coco powder. That works the same way that flour does to dust the inside of the pan.
Now we have got our cake pan all floured and ready to go. The non-stick that's on these bundt pans is very high quality non-stick which is going to make most of the cake release, but it always helps to just augment it with a little bit of butter or shortening, just in case there's a little bit of sticking going on.
