How to Make Light Georgia Pecan Pie with Honey Pecan Topping

Ingredients

Makes 8-10 servings

Filling:
2 eggs
¼ cup sugar
1 cup light corn syrup
2 tablespoons all-purpose flour
1 tablespoon vanilla extract
1 cup chopped Georgia pecans
1 (9-inch) unbaked pie shell or prepared rolled pie dough (formed into a 9-inch pie pan)

Honey Pecan Topping:
3 tablespoons light brown sugar
1 tablespoon butter
3 tablespoons honey
1 cup Georgia pecan halves

Instructions

1.    Preheat oven 375 F.
2.    In mixing bowl, beat together eggs, sugar, corn syrup, flour and vanilla until creamy.  Stir in Georgia pecans.
3.    Pour into pie shell, bake 40-50 minutes or until pie is set.
4.    In small pot, combine brown sugar, butter and honey.
5.    Cook over low heat until comes to a boil, stirring.  Stir in Georgia pecans.  Remove from heat.
6.    During last 5 minutes of baking, remove pie from oven, spread topping evenly over top.  Return to oven. Broil until topping is bubbly and golden brown, watch carefully.

Holly Clegg: Hi! I am Holly Clegg, author of the Trim & Terrific cookbook series and with the Georgia Pecan Commission today we're going to make a Georgia Light Pecan Pie with a honey crunch topping and really it is so easy to do. We're going to start by either buying a crust or I'm going to give you the option of the gingersnap crust. Then we're going to make this luscious filling with just six ingredients and you don't even need a mixer. Bake it in the oven and then we're going to top it with this indulging honey pecan topping. This is one recipe you will definitely want to try. You really don't need many tools to make this recipe. In fact you probably already have them in your kitchen. All you're going to need is a pie plate, a whisk, a pot to cook your topping in and if you decide to make the gingersnap crust you'll need a food processor and that's all it is. The ingredients you need are 2 eggs, 1/4th cup sugar, 1 cup light corn syrup, 2 tablespoons all purpose flour, 1 tablespoon vanilla extract, 1 cup chopped Georgia pecans and 1 nine inch unbaked pie shell. If you decide to make your own gingersnap crust you'll need 1 and 1/4th cups gingersnap cookie crumbs, 2 tablespoons butter melted and 1 and 1/2 teaspoons vanilla and for the honey crunch topping you will need 3 tablespoons light brown sugar, 1 tablespoon butter, 3 tablespoons honey, and 1 cup of Georgia pecan halves. And a little bit about food safety. If you want to store your pecans in refrigerator they last up to 9 months in an airtight container. And if you are one of those who like to put them in the freezer they'll be fine in a freezer safe container up to 2 years. Let me tell you a little bit about myself. I am the author at the trim&amp and TERRIFIC cookbook series including a Diabetic book and I'm working with the Georgia Pecan Commission. I love to eat and especially dessert. But I don't think you have to give up anything. You can make all your very favorites but we're just going to change how you prepare it. Basically I trim the recipes down and I keep them terrific. When you think of pies; pecan pie always pops up as a favorite and especially when they're made with Georgia pecans. Let's get started.
