Healthy Comfort Recipes using Pecans
Chef Holly Clegg demonstrates how to make some of her favorite lighter versions of comforting favorites, including Creamy Squash Casserole with Georgia Pecan Crumble and Ham Pot Pie with Georgia Pecan Crust.

Holly Clegg: Hi! I'm Holly Clegg with the Trim and Terrific cookbook series and I'm also working with Georgia Pecan Commission. Today, I'm going to show you some of my very favorite healthy comfort food recipes. We're going to start with the Creamy Squash Casserole with Georgia Pecan Crumble. It's so easy to make. The ultimate side, I'm going to show you how to do everything from mash the squash, cook the squash, and put on this buttery pecan crumble that just tops it all perfectly. Then, we're going to make everyone's favorite, a Ham Pot Pie with a Georgia pecan crust, very easy to do. I'm going to show you how to make a simple white sauce. We're going to toss in some frozen mixed vegetables and a crust with reduced-fat pretzel rolls with mashed in Georgia pecans. Oh! It is so good. And remember, everything is trim and terrific. You're not going to need much to get started with this. In fact, you probably have everything already in your kitchen. All you'll need is some pots and pans, rolling pin. If you have or if not, the crust is so easy. You mash it down in a food processor to puree your squash or again you could mash it with whatever you have.
I'm going to show you all the ingredients for each recipe and in fact, there very pantry friendly ingredients that you probably already have in your kitchen. Before we get started, let's talk a little about safety. Remember, knifes are sharp and the stove is hot. So you always wanted to be careful in the kitchen. Let me tell you a little bit about myself. I'm Holly Clegg, author of the Trim and Terrific cookbooks series including a diabetic book with The American Diabetes Association. I'm also working with Georgian Pecan Commission. I love to eat and I love food but I don't think you have to give up anything. But remember, we know there is correlation with food and our health and I do think we need to make changes. You don't have to change what you prepare, just how you prepare it. I trim the recipes down and I keep them terrific. I'm also aware everybody is busy and nobody has time to cook. So I'm concerned and want to make all my recipes pantry friendly, user friendly, and time friendly. So you could put a healthy dinner on the table in less than 30 minutes.
