Philip Herington: Hi! This is Chef Philip Harrington with Harris Teeter. Today we're going to do a quick, easy and unique spin on a classic appetizer. We're going to be doing Moroccan Spiced Chicken Wings.
Now to make this recipe, first you're going to need a 4 pound bag of chicken wings, 1 cup extra virgin olive oil, half cup lemon juice, quarter cup honey, 5 tablespoons cumin, 2 tablespoons turmeric, 1 tablespoon garlic powder, 1 tablespoon kosher salt, an ounce of finely chopped fresh mint and 1 ounce of finely chopped fresh cilantro.
The first step is to marinate the chicken. We've got our chicken, we're going to add our olive oil, our lemon juice, our honey, our cumin, our turmeric, our salt and finally our garlic powder. I am going to put on a glove because I find this the easiest and the best way to mix a marinade.
Alright we're going to give these a good toss, make sure everything is thoroughly coated and that all the ingredients are combined. Alright, we're all set mixing them up, lets get these guys in the refrigerator. Now, the marination process is by far the most important. This allows you to get maximum flavor and maximum texture. So, ideally I like to let them marinate overnight or for full 24 hours. They are in the refrigerator, I am done and I am going to take the night off, I am going to see you guys tomorrow.
Alright, our chicken wings have spent plenty of time in the refrigerator, let's check them out and see if they are ready. Beautiful! These smell great! Now first thing, that make sure we preheat our oven to 375 degrees and now we're ready to go. All is we do, we're going to take the marinade, the chicken wings and all, and it's going to go on a cookie sheet or a cake pan.
And let's get these in the oven. We're going to come back in 20 minutes and then they'll be ready to go.
Beautiful! These are perfect and now let's finish, let's eat! First you need to put your wings in a bowl and then we add our mint and our chopped cilantro. Giving them one more quick toss and we're going to plate them on. And there you are, Moroccan Spiced Chicken Wings, Enjoy!
