Sweet and Spicy Buffalo Wings

Ingredients

3/4 cup HT Traders honey
3/4 cup diced red sweet peppers
1/3 cup HT Traders rice wine vinegar
1/3 cup pineapple juice
1/2 teaspoon garlic salt
1/2 teaspoon bottled hot pepper sauce
1 1/2 pounds chicken wings

Instructions

Combine honey, peppers, vinegar, pineapple juice and seasonings in small saucepan; mix well. Cook and stir until mixture begins to thicken. Pour over chicken wings in baking dish.  Bake at 350ºF. 12 to 15 minutes and pray there are enough to go around.

Phil Anderson: Hi! I am Chef Phil Anderson, Harris Teeter's Executive Chef. And 'A Wing and A Prayer' is the name of this recipe. It's chicken wings. It's kind of sweet, kind of spicy. And the ingredients are three quarter cups of honey, three quarter cups of Chipotle pepper in an adobo sauce, one third of a cup of rice wine vinegar, one third of a cup of pineapple juice, a half a teaspoon of garlic salt, a half a teaspoon of hot pepper sauce, and a pound and a half of chicken wings. Well, we first preheated our oven to 350 degrees and this is really simple recipe. You combine all of your ingredients, you massage it into your chicken wings, you put it on your sheet pan and into the oven for 20 minutes or so. We first start off with the honey because the vinegar and the pineapple juice will help dissolve it, and then thereby creating a sauce. Okay. So I am cleaning up my jar here with the civite (ph) that's in the vinegar and the juice. So you have that nice and -- there we go. Now we're going to add in our hot peppers, this is a hot and spicy marinade, just a dash of hot sauce. Then our garlic salt. Make sure that's nice and blended very well. Okay. And we're going to just pour it right over the chicken.

Now you can let this marinate but there is no specific time. You can do it for an hour, you can do it for half-an-hour, you can do it for four hours, but you really kind of massaging it into the meat. And after your marinate it for however long you want, the intensity is what you're looking for. If you want it to be light, sweet and spicy, then you do it just like this. If you want it to be more intense then you leave it in the marinade longer.

Okay. I have got a pan here, sheet pan, and what I am going to do is I am going to lay the wings down, I don't want them to be touching, so lay them down like -- they will cook nice and even with a little bit of extra stuff on them. Now leave those into the oven for about 20 minutes or so. All ovens are different. So you just have to really check it. Okay. So we're going to put this into the oven for about 20 minutes. It's as simple as that. We've just taken these out of the oven, A Wing and A Prayer. Here's your chicken wings, pray that you have enough to go around. Enjoy!
