Amy Riolo is an internationally recognized culinary expert specializing in Middle Eastern and Mediterranean culture and cuisine. As a cookbook author, lecturer, food historian, food writer, culinary consultant, and cooking instructor, Amy promotes her philosophy of cooking and living with both pleasure and health. Her first book, Arabian Delights; Recipes & Princely Entertaining Ideas from the Arabian Peninsula has received rave reviews (Capital Books). Her second book Nile Style; Egyptian Cuisine and Culture (Hippocrene Books) will be released in spring 2009. She is also completing The Mediterranean Diabetes Cookbook, (American Diabetes Association) which will be released in spring 2010.

Amy’s popular lectures range in topics and include everything from Middle Eastern business etiquette to the history of various cuisines. She has been an invited guest speaker for the Embassy of the Arab Republic of Egypt, Welcome to Washington International, Montgomery College, Les Dames D’Escoffier, The Baltimore-Luxor-Alexandria Sister City Committee and the Mycological Association of Washington, DC. Amy also makes frequent appearances on numerous television and radio programs both in the United States and Egypt including Fox TV, Montgomery and Fairfax County TV, Nile TV and WHYY.           

Amy currently writes the “Culture and Cuisine” feature for the Baltimore- Luxor-Alexandria Sister City Committee. She has also written articles for Cooking Light Magazine, Azizah Magazine, and the Kulanu newsletter. A graduate of Cornell University, Amy has experience in vocational, recreational, and children’s instruction, as well as corporate team building and cultural/culinary events. Her knowledge of the Italian, French, Spanish, and Arabic languages has enabled her to interpret many cultures and cuisines with intimacy and ease. She regularly teaches cooking classes at Sur la Table in Arlington, Virginia, and for private organizations.

A successful culinary consultant, Amy enjoys developing menus, recipes, training seminars, and themes for corporations, restaurants, and hotels. Amy is often asked to work as a consultant for museums where she creates menus and décor which represent the theme of new collections. In addition, she works with curators to incorporate sensory components like scent, touch, and taste into the schedule of events, allowing museum patrons to fully experience each exhibit.

Amy is a member of The International Association of Culinary Professionals, Culinary Historians of Washington, Les Dames d’Escoffier, Slow Food DC, Welcome to Washington International (where she co-chairs the Gourmet Committee), Cornell Club of Washington, the Women’s National Book Association, and the Baltimore – Luxor – Alexandria Sister City Committee (Where she is the chairperson of the Baltimore Friends of the Alexandria Library). Amy is based in the Washington DC, area and maintains a home in Egypt. She is currently organizing culinary tours to both the Mediterranean and Middle East.

The ingredients which we'll need are one ripe banana, sliced, one cup ice, one cup plain non-fat yogurt, two tablespoons natural honey, one teaspoon vanilla extract, one half cup frozen strawberries, thawed, one half cup frozen blueberries, thawed, and two tablespoons ground flaxseeds.

How to Make a Strawberry Beauty Smoothie

Ingredients

Active Time: 3 minutes
Total Time:  3 minutes
Yield: approximately 4 cups
Serves: 4

1 ripe Banana, sliced
1 cup Ice
1 cup Harris Teeter (HT) Plain Nonfat Yogurt
2 tablespoons Natural Honey, or to taste
1 teaspoon HT Vanilla Extract
1/2 cup HT frozen Strawberries, thawed
1/2 cup HT frozen Blueberries, thawed
2 tablespoons Flax Seeds, ground
 

Instructions

Blend the banana, ice, yogurt, honey and vanilla extract together until the banana is well blended. Add the strawberries and blueberries and blend on low speed for 30 seconds or until frothy. Stir in flax seeds. Pour into clear glasses and serve cold.

Chef Amy Riolo: Hi! I am Chef Amy Riolo with Harris Teeter and today we're making a Strawberry Beauty Smoothie. The ingredients which we'll need are one ripe banana, sliced, one cup ice, one cup plain non-fat yogurt, two tablespoons natural honey, one teaspoon vanilla extract, one half cup frozen strawberries, thawed, one half cup frozen blueberries, thawed, and two tablespoons ground flaxseeds.

We'll start by putting our ice into a blender or a smoothie maker. This is just one cup of ice and we'll go ahead and we'll mix that together with our strawberries. These are frozen that I have then defrosted, you can go ahead and put the lid on and mix.

Once the ice is pretty well-crushed, we can go ahead and add in our other ingredients. The first thing we're going to need is our banana, and it's really good to slice the banana just right where you're using it, because if not, they'll discolor. But the great thing about the smoothie is that you can make it in large quantities, and then go ahead and keep it in your refrigerator, and it's good everyday during the week. If you are a kind of person who doesn't have a lot of time to make breakfast, you'll really like the smoothie. It's also a great snack and kids love it. And then we'll add in our yogurt. This is just a plain yogurt, if you wanted to add vanilla, you could do that as well. We've got a cup of our frozen blueberries that have been thawed. I'm also going to add in a teaspoon of vanilla extract, but you can add in other extracts or you can leave this out if you like. You could also do lemon juice that will be really delicious in this recipe. I'm also going to add some honey as a sweetener. This is a few tablespoons, but you can add it to taste as much as you need. You might need a little bit more or a little bit less.

Another great sweetener that you could use in place of honey, specially if you are diabetic, is agave nectar, because agave nectar comes from a cactus and it does not cause an alteration in your body's blood sugar level. So that's a really nice one.

Now this is ground flaxseed; here we have whole flaxseeds that have been roasted and here we have some ground flaxseeds. Flaxseeds are wonderful for you, but it's really nice to get the ground ones, because if they're already ground up or if you grind them yourself, then our bodies can absorb the nutrients a little bit more. So you can buy them this way, it's wonderful. They store for a long time. Just go ahead and grind them up in a food processor, if you have a large quantity or in a spice blender or a coffee grinder.

If you don't want to do that, you can buy them already pre-ground. So I'm going to add the pre-ground ones right in, and then we'll go ahead and blend this together one more time.

So here we have our Strawberry Beauty Smoothies and we can go ahead and serve these. This actually makes two large glasses like this. So if you wanted to serve four people in smaller glasses, you could definitely do that, but if you wanted to have the larger size, they are really delicious. I don't think you will be sorry for having a large size.
