Healthy Lunch - Apple Cheddar Panini
Ingredients
8 slices whole-grain bread
1/4 low-fat honey mustard
2 crisp apples, thinly sliced
8 oz low-fat cheddar cheese, thinly sliced
cooking spray
Instructions
Preheat panini press. Assemble paninis by spreading mustard on 4 slices of bread. Layer cheese and apples, top with bread slice. Spray press with cooking spray and grill paninis about 3 minutes. Serve.

Amy Riolo: Hi! I am Amy Riolo for the US Apple Association. Today, we're showing you how to incorporate Apples into a healthy lifestyle. Now, we are going to make Apple-Cheddar Panini. The ingredients which we will need are 8 slices whole grain bread, 1 quarter cup low-fat honey mustard, 2 crisp apples thinly sliced, 8 ounces low-fat Cheddar cheese thinly sliced and cooking spray.
So let's begin. The first thing that we have to do is preheat our Panini press and I have got mine already set to Max and the green light is telling me that it's ready to go.
So all we have to do now is assemble our Panini and this is very simple but it's still delicious. So here we have our whole grain bread. I am going to go ahead and slather some of the honey mustard right on the bottom of each of the pieces, and there are so many different delicious Paninis that you can make with apples.
You can use a delicious apple and Nutella to make great Panini, this almost a dessert considered Panini or snack. You can do brie and Granny Smith apples, they taste great together.
You can also do smoke turkey and apples with different kinds of cheese. This is a good way to get the kids to eat their fruit too because even if they don't like to eat apples by themselves, they are probably going to like them in this Panini.
So now that we have the honey mustard on all of the bottoms of the bread, we can go ahead and start arranging our apple and cheese slides. We are just going to do four of the slices and then we'll use the other four as our top. So go ahead and make sure that the bottoms all have a piece and then we'll go ahead and place our apples right on top of that.
You want to be careful because as the Panini press comes down, it usually tends to push things towards the sides. So you want to make sure and not overcrowd the apples on the top of the Panini and then we've got more cheese for the tops. Now we will go ahead and top each of our Panini and just press down a little bit to make sure that everything comes together and help out our press before we even get started.
Now, if you don't have a Panini press at home, it's no problem. You can still make these, just use a regular skillet like you would use to make a grilled cheese, but instead of flipping the grilled cheese over, you would heat up the bottom of another skillet on another burner and then take that skillet and press it down on the top of your Panini, so it's like you have the two hot irons coming together and you are just mimicking a Panini press.
So now we are going to coat our Panini press with our cooking spray so just to make sure that nothing sticks and you know the word Panini in Italian means sandwiches. Panino is one sandwich and Panini is multiple sandwiches but here in the States, we use the term Panini to refer to hot sandwiches.
So I am going to go ahead and just press down and you can hear the cheese start to sizzle. Also the smell of the Panini is starting to be released. So now about three minutes have passed and our Panini are beautiful. If you're not sure you can just lift up the lid and check and once you see the grill marks, then you know that they are done, also our cheese has melted.
So we've just finished making our quick and healthful lunch, Apple-Cheddar Panini. Up next, we'll have a great dinner, apple and halibut kebabs.
