Healthy Breakfast - Apple Pancakes with Maple Apple Sauce
Ingredients
Apple Pancakes:
1-1/2 c all-purpose flour
3 t baking powder
1/2 t salt
3 T sugar
1/4 t nutmeg
1/3 t baking soda
1 egg
3 T butter, melted
1/4 t vanilla
1 c milk
1 c grated apples
Maple Apple Sauce:
2 lg apples, cored and diced
2 t butter
1/4 c maple syrup
1/8 c dark corn syrup
dash salt
Instructions
For pancakes: combine dry ingredients in bowl. Add in vanilla, egg, melted butter; mix well. Gradually stir in milk. Whisk in grated apples.
Heat griddle and coat with nonstick spray. Pour on pancakes. Flip when edges bubble and remove from heat when cooked through.
For sauce: Heat butter in pan. Add maple and corn syrup and apples, stir to coat. Cook over medium-high heat for several minutes, until apples soften. Serve over pancakes.

S. Apple Association, and today we're showing you how to incorporate apples into a healthy lifestyle. The next recipe we're going to make is apple pancakes with maple apple sauce. The ingredients which we'll need are one-and-a-half cups all-purpose flour; three teaspoons backing powder; one half teaspoon salt; three tablespoons sugar; one quarter teaspoon nutmeg; one third teaspoon baking soda; one egg; three tablespoons butter, melted; one quarter teaspoon vanilla; one cup milk; one cup grated apples. For the maple apple sauce we'll need two large apples, cored and diced; two teaspoons butter; one quarter cup maple syrup; one-eighth cup dark corn syrup; and a dash of salt. So we'll begin making our apple pancakes by putting the flour into the bowl. You know a lot of people are intimidated by making pancakes by scratch, but it's such an easy recipe to make. So we're going to add our baking soda and our baking powder, a little bit of salt, our sugar, and our nutmeg. We'll just go ahead and mix these in together. Baking powder is the really key ingredient to give your pancakes some leavening and to make sure that they become nice and fluffy. So then we'll go ahead and add in our vanilla and our egg. I'm going to mix those together. Now, I can add our melted butter and this helps to get them a really rich smooth taste. The butter also helps to hold everything together really well. So the pancakes are nice and even. Just little by little, I'm going to start adding the milk in. You can use as much milk as you like. If you like them to be very thick, you may want to use a little bit less milk and if you like them to be very thin, you could always add a little bit more. The addition of grated apples reminds me of apple sauce. Apple sauce is such a great addition to baking. You can cut a lot of fat and a lot of calories by substituting apple sauce for some of your richer ingredients like eggs and some of the oils. And one of the things that you can do is have this batter ready to go in the refrigerator overnight, and then the next morning when you wake up and you want to make your pancakes, all you have to do is grate the apple and add that in at the last minute. That way you have a jumpstart on breakfast. As you can see, this really takes no time to put together at all. So I'm going to switch over to my whisk now and I just want to use the whisk so I can make sure that I don't have any lumps in the batter. Alright, I'm going to go ahead and mix in the grated apples. It's so nice to have a little bit of crunch inside of the nice soft pancake. So that's all mixed up. And now our griddle is preheated. And this is on about 350. What I'm going to do now is just make sure and coat it with some of our non-stick spray, you can use butter if you want or whatever you like. You want to make sure that it's nice and coated so nothing sticks. And you can see the surface of the griddle. It's just starting to bubble. And that's how we know it's heated up and it's ready to go. And I'm going to go ahead and start making pancakes. You can make these whatever size you like. If you like to do the silver dollar size, you could do a little baby ones. If you like bigger pancakes, you can do that as well. Really whatever you prefer. So now we're going to let the pancakes cook for about a minute. What are we going to look for is for some bubbles to start appear on the top. We can start seeing a little bit of bubbles here around the edges, but we want them to get a little bit bigger, and we want them to appear over the entire top. So now our pancakes are ready to turnover. You can see they're nice and golden. We'll give them about a minute on this side also, and now our pancakes are ready. They're going to taste great with the apple maple sauce. Now let's get started with the sauce. The first thing that we're going to need to do for our sauce is to melt our butter. This is such a rich and delicious sauce that you're going to end up using it over and over again not only for pancakes, but it tastes great as a topping on yogurt or ice-cream. There're so many different things that you can use this sauce for. So now that our butter's melted, I'm going to go ahead and add in our maple syrup. Then I'm going to add in my dark corn syrup, and just mix everything together. And then I'm going to add in my Granny Smith apples which have just been diced. You can use whatever kind of apples you like, but I think because the sauce is so nice and sweet, the tart of the Granny Smith works really well. I have my apple pieces soaking in the vitamin C fortified apple juice just to keep them from browning. So now I'm stirring my apples into the maple butter corn syrup mixture. I'm just going to make sure that everything is really coated and combined. I'm keeping my heat on about medium high. And I'm just going to let these simmer together for about 3-5 minutes until the sauce gets nice and thick and the apples become soft. So our apple maple sauce has just finished cooking. You can tell how our apples have really softened. And now I'm just going to go ahead and put them into our gravy boat here, and then we can use them to top our pancakes. Here are our finished pancakes and we'll go ahead and just top them with our delicious apple maple sauce. There we have our apple pancakes with apple maple sauce.
