Smokey Balsamic Baked Beans
Ingredients
1 tablespoon Harris Teeter extra virgin olive oil1 yellow onion, diced
6 cups low sodium navy beans (drained and rinsed)
1 teaspoon Harris Teeter ground cumin
1 teaspoon maple syrup
1 teaspoon chipotle peppers in adobo sauce
1 cup tomato puree
1/4 cup Dijon mustard
2 tablespoons H.T. Traders balsamic vinegar
1/4 teaspoon freshly ground black pepper
½ teaspoon kosher salt
Instructions
1. In a large deep skillet or saucepan, heat oil over medium high.2. Add onion and sauté until golden.
3. Add in beans, cumin, maple syrup, chipotle, tomato puree, Dijon mustard, balsamic vinegar, salt, and pepper. Stir to combine.
4. Bring to a boil, reduce heat, and simmer 20 minutes or until flavors have combined.

Amy Riolo: Hi! I'm Chef Amy Riolo for Harris Teeter and today, we're making Smokey Balsamic Baked Beans. The ingredients which we'll need are: one tablespoon extra virgin olive oil, one yellow onion, six cups low sodium navy beans, one teaspoon ground cumin, one teaspoon maple syrup, one teaspoon chipotle peppers in a double sauce, one cup tomato puree, one-quarter cup Dijon mustard, two tablespoons balsamic vinegar, one-quarter teaspoon finely ground black pepper and one-quarter teaspoon kosher salt. Let's begin.
The first thing which we'll need to do is turn our pan on to medium high and then I'm going to coat the bottom of my pan with the olive oil and as soon as the olive oil heats up, I can go ahead and add my onions and you'll see my onions aren't too fine over diced that are really just chopped here, and then I'm going to stir the onions around, let the onion get coated in the olive oil and then I'm just going to let them saut for about five minutes and although it takes a couple of minutes, this extra step is really worthwhile, because as the onions saut and they start to get soft and break down, they really release a lot of their sweet flavor into the recipe and that's important.
So, now, about five minutes have passed and we can see that our onions have gotten much softer and they're staring to get light golden. That's exactly what we want.
Now, we can add in our navy beans. Now, we can add in our balsamic vinegar and our maple syrup, which is really going to add some nice sweetness to the beans.
Now add our tomato puree, our cumin, our Dijon mustard, our chipotles, and if you don't like hot, you can either remove the seeds from the chipotles or you can add roasted red peppers, little bit of salt and some pepper, and we'll just stir this up. People will think that you spent all day making these baked beans.
So, now that all of our ingredients are incorporated, we can just put a lid on our beans and simmer them for about 15 to 20 minutes. This is going to allow all the flavors to melt and that's it, it was that simple to make this dish.
