Dr. Alessio Fasano: Hi, I am Dr. Dr. Alessio Fasano Pediatrician and the Director of the Center for Celiac Research at University of Maryland School of Medicine. Today in partnership with General Mills, we are discussing how to eat gluten-free healthfully. In this video series we will cover what is Gluten? Why it is a problem for people? Practical tips for maintaining Gluten free diet, including grocery shopping, cross contamination and dining outs. What is Celiac disease as a condition? A situation that we estimate that affects a large population in the United States up to 100-133 people in the United States are effected by the Celiac disease. The number of people that have Celiac disease and diagnosed, that we project 95% of the 3 million people are not diagnosed yet. Other form of Gluten reaction, including Gluten sensitivity and before we begin our series, let me tell you a bit about myself.
I am a graduate from the University of Naples in Italy. And I moved to United States in 1993, when I established the division of Pediatric Gastroenterology and Nutrition at the University Of Maryland School Of Medicine.
In 1996, we established the Center for Celiac Research, the first of this kind in which under the same umbrella, science and clinical care and awareness of the disease were blend together to help people with Celiac disease in severe condition.
