Soup Recipes - Armenian Apricot Soup

Sheilah Kaufman: Hi! I am Sheilah Kaufman, and today, we are making an Armenian apricot soup, and we are using canola oil, which is heart healthy and has a very high smoke point and is very versatile for cooking, baking, frying, anything you would need a good oil for. These are the ingredients you will need. We are going to start by heating three tablespoons of canola oil, two diced onions and then we are going to put in three carrots peeled. We're going to saut this about ten minutes, just to soften the carrots and the onions. Once the vegetables have finished sauting for ten minutes, we are going to add a tablespoon of ground cumin. You really want to get the cumin into the oil, so that the flavors are really married throughout the recipe. Now, we are going to lower the heat to simmer, and we are going to let the vegetable sweat for ten minutes and then we are going to add three cups of red lentils, and enough water to cover the lentils. Now, the water becomes optional. The total recipe cost for around nine cups of water. So I always start with about four cups and let it go from there. You want to really, really mix well. We are going to bring this to a low boil, and then reduce the heat to simmer again. We're going to cook for about 20 minutes. Now that this is finished cooking, we are going to put in some salt. We're going to turn off the heat and we are going to add 12 ounces of chopped, dried apricots. We are going to stir it really good. Now we're going to puree the soup with the immersion blender and the advantage of this is we don't have to wait for the soup to cool down, like we would if you were going to do this in the food processor in batches. We are going to do it all at once right in the pot we cooked in. Now that we have pureed it, we are going to taste for seasoning, and adjust the salt and pepper if necessary. I like this as a soup. Sometimes I drink it right out of a mug, but I usually like a salad or a tuna salad with it. Sometimes it's just a meal with bread for me. It's good any way you want to have it.
