The National Hot Dog and Sausage Council is a project of the American Meat Institute and is funded by contributions from hot dog and sausage manufacturers and those who supply them with equipment, ingredients and services. Established in 1994, the Council conducts scientific research to benefit hot dog and sausage manufacturers. The Council also serves as an information resource to consumers and media on questions related to quality, safety, nutrition and preparation of hot dogs and sausages.

Hot Dog and Sausage expert Janet Riley demonstrates how to cook six recipes that you can either partially or entirely cook at home the day before to bring to your tailgate party.

Janet Riley: Hi! I am Janet Riley and I am President of the National Hot Dog and Sausage Council, and I'm here today to share some of our best tailgating recipes with you. You know the key to a great tailgating experience is summed up in one word, preparation.
Our recipes are designed, so that you can make them ahead if you choose and just reheat them on the grill of your tailgating site. Today, we'll get the whole meal covered for you; we've got a salad, we got an appetizer, and we've got entre greats like grilled knockwurst, grilled brats, and grilled Italian sausage.
Let me tell you what I'm going to teach you how to make today. Frankly, fabulous dip, Char-Dog Chicago Salad, grilled knockwurst with golden onions, All-Star Chili Dogs, Heisman potato salad with grilled kielbasa, and sausage and vegetable kebabs with mustard sauce. All of these recipes are designed, so that they're easy to make and transport.
The only thing you might want to make sure, you stock up on as plenty of aluminum foil and aluminum foil paint, because that will make your tailgating experience even easier.
Now, what about safety? Some sausages are fresh and those need to be cooked thoroughly. Other sausages and hotdog are pre-cooked. Make sure you check the packages and follow the manufacturer's instruction to ensure that they are absolutely safe, and remember to keep hot foods hot, cold foods cold and wash your hands.
Now what about myself? I am President of the National Hot Dog and Sausage Council in Washington DC. I am also known as the Queen of Wien and it's a title that I've been proud to hold for 20 years. I've had the opportunity to get to know many of America's hotdog and sausage makers. They provide an incredible array of products that you'll have the opportunity to enjoy a few of the tailgating recipes.
