Tailgating Recipes - Grilled Knockwurst with Golden Onions
Hot Dog and Sausage expert Janet Riley demonstrates how to make garlic-flavored knockwurst sausage, topped with delicious golden onions that are cooked with beer.

Janet Riley: Hi! I am Janet Riley and I am President of The National Hotdog and Sausage Council. Today, I'm going to teach you how to make a recipe that your friends and family are going to love. This called Grilled Knockwurst with Golden Onions. And if you like a little garlic in your sausage then a knock is the choice for you.
You'll need 8 knockwurst, 2 garlic cloves, 1 (12 ounce) bottle or can of ale, 1 tablespoon olive oil, 1 pound yellow onions sliced very thin, 2 tablespoons spicy brown mustard, 1/4 teaspoon freshly ground black pepper. We're going to start-off by crushing two cloves of garlic with a knife. After we do that we want to pierce our knockwurst about four times each, because we're going to be marinating these.
Then we add our crushed garlic. Now we top it with beer, then we're just going to let this refrigerate, cover it for about an hour to an hour-and-a-half and then later we're going to grill it. So now our knockwursts have been marinating and they smell great. We've been heating up some olive oil in a pan and we're going to add our sliced yellow onions.
Start browning the onions and then we're going to transfer our knockwurst on top of these onions. Now we take our remaining beer, we're going to pour about a half a cup into our measuring cup and then we transfer that, pour it over the knockwurst and the onions and we're going to cover it and just let it heat up for about 5 minutes.
Now I'm going to remove my lid and I'm going to start to transfer the knockwurst directly to the grill. We're going to keep on cooking the onions so they get nice and brown, but we're going to add some mustard and a pinch of pepper. We're just going to mix it altogether we'll cover it again and let it brown. Then when the knocks are ready we'll be ready to transfer them to a pan.
Now you could simply stop right here and prepare your onions and knocks and put them into pan and take them with you to your tailgate and continue cooking right on the grill. But I'm making them here at home, so I'm going to continue cooking. So here we are we've got some great knockwurst sizzling on the grill, nice char marks for added flavor, and we have some golden onions that have been sauted in beer and in mustard.
So we're going to start by transferring two of our knockwurst to a bun and we're going to top with some golden onions. If you like more mustard feel free to add it on top. So there you have it, Grilled Knockwurst with Golden Onions. It's great with the beer, if you're 21 that is. And remember you can cook these onions at home and just heat them up in a foil pouch at your tailgate. Enjoy!
