Salad Recipes - Shrimp, Avocado and Bacon Salad with Chipotle Ranch Dressing

Ingredients

Dressing:

3/4 c ranch dressing

juice of 1 lime

2 T cilantro, finely chopped + whole leaves for garnish

1 t chipotle in adobo - marinade only

 

Salad:

1 lb cooked cleaned shrimp

1 avocado, diced

1/2 pt. baby tomatoes

1/2 c chopped green onions

1/4 c bacon, cooked & chopped

1 head Bibb lettuce, washed, leaves separated

tortillas to serve

Instructions

In small bowl, combine ranch dressing, lime juice, and adobo marinade. Toss shrimp in half of dressing; save other half for salad.

In large bowl, toss lettuce with avocado, green onion, tomatoes, and bacon. Add dressing, toss to coat. Top with shrimp and serve with warmed tortillas.

Sarah Wally: Hi! I am Sarah Wally, a registered dietitian with the Association for Dressings & Sauces. And today I'm going to teach how to make a delicious salad with shrimp, avocado, and bacon, topped with a Chipotle Ranch Dressing.

Now the nutritional value of your salad is really going to depend on what ingredients you choose. So the specific vitamins, and minerals, the phytonutrients, and the amount of fiber that your salad provides is going to vary from recipe-to-recipe.

So to get started today we're going to take three-quarters of a cup of Ranch dressing, the juice of one lime, two tablespoons of finely chopped cilantro and some cilantro leaves for additional garnish. One teaspoon of chipotle and adobo and we're going to be using the marinade only, one pound of cooked and clean shrimp, one diced avocado, a half a pint of baby tomatoes, a half of a cup of chopped green onions, a quarter of a cup of cooked chopped bacon, one head of bibb lettuce washed with the leaves separated, and some tortillas.

So in a small bowl we're going to start by combining our ranch dressing, the juice from one lime, our chipotle and adobo marinade, and our chopped cilantro. Topping a salad with your favorite dressing can actually improve the nutritional value of your meal. The healthy oils that are found in many salad dressings help your body better absorb certain nutrients like antioxidants that are found in fruits and vegetables.

Now we're going to take about a quarter of a cup of the dressing mixer we just made and add that to our cooked shrimp. Now you're going to want to make sure that you coat all of your shrimp really well, so be sure to get in there and stir it up, and then once all your shrimp are coated we're going to want to set this aside.

So now we have our salad greens, into that we're going to add our chopped avocado, our sliced green onions, the baby tomatoes, and our bacon bits, give that a stir to make sure everything is combined and then we're going to add the rest of our dressing.

So again we're going to want to mix this really well, make sure that the salad dressing is covering all our greens and our other ingredients. And now we're ready to plate this up and add our shrimp. Nutrition experts agreed that most Americans need to increase the amount and the variety of vegetables they eat. So key recommendations focus on eating more dark green, red, and orange veggies. Now once we have this all mixed up we're ready to plate and add our shrimp.

Now that we have our salad plated we're ready to top it with some of that shrimp that we had marinated in our delicious dressing mixer earlier. I am just going to want to plate that up, and you can serve this with warm tortillas on the side and you're ready to serve.
