Andrea Lo: Hi! I'm Chef Andrea Lo with the Horseradish Information Council. Today, we'll be making spicy Soft Shelled Chicken Tacos with caramelized onions, peppers, and horseradish sauce.

So let's begin by heating our olive oil in our pan and as soon as you start to smell the olive oil and it cooks the bottom of the pan and we got those nice ripples in the oil like that; that's how we know that it's time to add our onions. 2 large sweet onions, thinly sliced we're looking for a nice light golden color on our onion. This will take about 3 minutes and every now and then I'm just going to stir them to make sure that they brown evenly.

So now our onions have softened up. They're starting to get a nice golden color and this is when I'm going to layer in my chicken. 4 skinless, boneless chicken breasts, sliced into 1/4 in strips. We'll just stir everything to incorporate really well and we're going to cook our chicken until it's cooked on all sides. You could also serve this mixture in pita halves or make chicken gyros or shawarma. Cooked or rotisserie chicken could also be used and added instead of the raw chicken for tasty spin on leftovers and to cut down on cooking time.

Now we can add our 1 teaspoon cumin, 1 teaspoon freshly ground black pepper, salt to taste, and stir to combine. Then we'll pour in 1 red bell pepper cored, seeded, and thinly sliced, 1 cup diced tomatoes, canned or fresh. When this mixture comes to a boil, we can reduce the hit and then let it cook for 10 to 15 minutes or until the chicken is cooked through and the vegetables are tender.

So while our chicken is cooking we can go ahead and start making our sauce and this sauce is so simple. You want to be able to use it on other things you cook as well. I am going to start out with my sour cream. 1-cup sour cream or mayonnaise and then I'm going to add in the third cup of diced red onions, 2 teaspoons lemon juice and 4 teaspoons your favorite brand prepared horseradish.

We're going to stir this up together. This is a great sauce. So now we've got our horseradish sauce mixed up and we're ready to plate. Our chicken has finished cooking very nicely. All we have to do to plate these is to put one of our tortillas down. You can heat them in advance if you would like. Then we'll take a little bit of fresh spinach put that on the bottom of the tortillas and this is going to get a little bit wilted once we put our hot chicken on top.

So now we're going to cover it with our chicken and pepper and caramelized onion mixture. Then we'll give a little dollop of our horseradish sauce right on top. So there you have spicy Soft Shelled Chicken Tacos with caramelized peppers, onions, and horseradish sauce. Remember the horseradish is the secret ingredient to add great flavor to your next meal.
