Amy Riolo: Hi! I'm Chef Amy Riolo with the Horseradish Information Council. Today, we're making Kicked Up Mashed Potatoes. Here are the ingredients we'll need. 11/2 pounds red potatoes cut into 2 inch pieces and boiled with the skin on until very tender and drained well. 11/2 pounds Russet Burbank baking potatoes, boiled skin on until very tender and drained well. One 1/2 cup butter, 1 teaspoon salt, 1 teaspoon pepper, 1/3 cup skim milk, 1/3 cup buttermilk, 1/2 cup your favorite brand prepared horseradish drained.
I've put our potatoes into a bowl. I've got the red and the yellow skin and now I'm going to just add the butter and mesh the sterling. These potatoes are called kicked up because of the edition of horseradish. You might not have known that horseradish is actually part of the mustard family and it shares its lineage with kale, cauliflower, brussels sprouts, and even the common radish.
So now I'm just going to work my butter right into my potatoes. You can do this in a food processor or in a standing mixer if you'd like. But I'd like to do it at this way because I like my potatoes to be a little bit chunky and that way you know that they're real.
So now I finished mashing our potatoes just so they're really rough mesh, they are kind of coming together, but you can still see bits of the potatoes. That's exactly what we want. Now I'm going to go ahead and add in my buttermilk. You can see how nice and thick and creamy the buttermilk is. It's going to give us some tang and really help the mixture to come together.
This makes it nice and creamy. I'm going to add in my skim milk. Add in about a teaspoon of salt and pepper. So I want to make sure that everything's incorporated really well. Then I'm going to adding my horseradish.
The great thing about horseradish is that it has only about two calories per teaspoon. It is low in fat and it's also low in sodium, but it provides dietary fiber. So it's a great addition in the recipes. I can smell the aroma right new, because it's been ground up. Whenever you're trying to cut down on fat and calories but to add flavor, you can use horseradish.
We could have actually omitted most of the butter in the recipe, if not all of it. When I make it from myself that's usually what I do, because the horseradish has enough flavor. So you don't need to butter it at all. You can use it as a topper or non-fat topper for vegetables and sides. Whenever you're trying to reduce salt, you can also add a little bit of horseradish in place of it.
