Amy Riolo: Hi! I'm Chef Amy Riolo for the Horseradish Information Council. Today, we're making Zesty Potato Salad with Horseradish Cheddar.
Here's the tip. Horseradish has only two calories per teaspoon, is low in sodium and contains dietary fiber. So it's an excellent choice when making a substitute for ingredients which are higher in fat and calories. You can actually use horseradish as a non-fat topper for vegetables or sides. You can also use in place of salt when you're looking for a low sodium option. So let's begin making zesty potato salad with horseradish cheddar.
The first thing I'm going to do is make my dressing. Here I have 3/4 cup with sour cream. This is a great dressing that you can also use for dips or vegetables. I'm going to add 1/4 cup mayonnaise and then our prepared horseradish. Did you know that a horseradish is actually a member of the mustard family and it shares its lineage with kale, brussels sprouts, cauliflower, and even the common radish?
So I'm just going to mix everything together. Then I'm going to store our sauce right into our 2 pounds small redskin potatoes, cut into 3/4 into chunks, and boiled in a large pot of salted water until tender and drained well. Then I'm going to add in 1/2 cup thinly sliced scallions, plus more for garnish, 1/2 cup sharp cheddar cheese grated, 4 slices bacon, turkey or pork cooked and crumbled.
I'm going to add in some pepper, and salt. I want to just store everything until it incorporates very well. That's it. So here we have our Zesty Potato Salad with Horseradish and Cheddar.
