The Council's key message to consumers and foodservice users of horseradish is that this unique vegetable root, long admired for its effects on beef and seafood, is very versatile. How to Make Cocktail Sauces Using Horseradish

Chef Amy Riolo with the Horseradish Information Council demonstrates how to make four variations on cocktail sauces: A classic cocktail sauce, a Southwest cocktail sauce, an Asian cocktail sauce, and a buffalo cocktail sauce.

Amy Riolo: Hi! I'm Chef Amy Riolo with the Horseradish Information Council. Today, we're doing variations on cocktail sauces. We'll be making a classic cocktail sauce, a Southwest cocktail sauce, an Asian cocktail sauce, and a buffalo cocktail sauce.

So let's begin. In order to make a classic cocktail sauce what we're going to do is use 10 ounce jar of the chili sauce, and we'll just pour that into our bowl. Then we're going to whisk in the juice of 1/2 lemon. Then we'll add in 3 tablespoons of prepared horseradish. You can use whichever brand or a flavor you prefer. The horseradish is what really gives this classic cocktail sauce a little bit of a kick. Then I'm going to add a teaspoon of our Worcestershire sauce. Then we just whisk everything up together. So there we have our classic cocktail sauce. We can cover it and refrigerate it and this will go perfectly with the cooked shrimp.

So now we can start making our second cocktail sauce. This is our Southwest cocktail sauce. The first thing we're going to need for this one is a 10 ounce jar of the chili sauce. Now we can add the juice of the 1/2 lime. Next I'll add in a teaspoon of Worcestershire sauce and then we can add a teaspoon of cumin. This is going to give it the great, smoky, Southwest flavor. A tablespoon of freshly chopped cilantro and 3 tablespoons of horseradish. Mix everything together and here we have our Southwest cocktail sauce. This is a great accompaniment for tortillas or to serve with and add with your favorite Southwest or Mexican dishes. Just cover it and refrigerate it until using.

Here is our third cocktail sauce recipe, which is an Asian cocktail sauce. So I'm going to start out with the 10 ounce jar of chili sauce and then I'm going to add in the juice of 1/2 lemon and a teaspoon of Worcestershire sauce, 1 teaspoon of soy sauce, 1/2 teaspoon of sesame seeds, 1 table spoon of grated ginger, and 3 table tablespoons of horseradish. So we are going to whisk this together. This is a great sauce to go on top of any Asian foods just really that you're making especially egg-rolls and we'll just refrigerate this until serving. So there we have our Asian cocktail sauce.

Lastly, we have our buffalo cocktail sauce. So we are going to make it by starting out with a 10 ounce jar of chili sauce. Then I'm going to add the juice of 1/2 of the lemon. One teaspoon of Worcestershire sauce, one 1/2 teaspoon of hot sauce, 1/2 cup of crumbled blue cheese, 1/2 teaspoon of black pepper and 3 tablespoons of horseradish. You can use whatever brand of prepared horseradish you like. Mix everything together. So here we have our buffalo cocktail sauce. This is a great sauce to put on your chicken wings, just refrigerate it until serving. Horseradish is the secret ingredient in all of the four cocktail sauces that we've made today, and it can add great flavor to your next meal.
