Saucy Beef Short Ribs
Ingredients
2 lb short ribs, trimmed
salt & pepper to taste
1 med. onion, chopped (divided)
water
2 cloves garlic, minced
1/4 c red wine
1 c original barbecue sauce
Instructions
Add ribs, salt & pepper, and half of chopped onion to large pot. Cover with water and bring to a boil. Reduce heat, cover, and simmer 1 hour. Remove from heat and drain, reserving 1/4 cup of cooking liquid.
Preheat oven to 350 degrees.
Add cooking liquid, garlic, remaining onion, red wine, and barbecue sauce to medium saucepan. Bring sauce to boil, then reduce heat and simmer 5 min. Spread ribs out in baking pan, and pour sauce over. Cover with aluminum foil and bake 30 minutes or until golden and cooked through.

Amy Riolo: Hi! I am Chef Amy Riolo with the Association for Dressings & Sauces. Today, we are making Saucy Beef Short Ribs. This recipe serves four. All we have to do for our first step is to take two pounds of beef short ribs trimmed and place them into our cooking pot. I am going to season these with a little bit of salt and pepper, and then, I'm going to sprinkle about half of my chopped medium onion on top and now, I'm just going to cover the mixture with water. So I just want enough water to cover the top of the ribs.
So I'm going to turn my fire on to high, and I just want to bring this mixture of water and onion that's covering the ribs to boil. So now, our water has come to a boil, I'm just going to turn my heat down and I'm going to cover it, we'll leave to simmer for about an hour and then we'll finish up our ribs.
Our ribs have finished cooking on the stove and I drained them and I reserved some of the cooking liquid. Here, I have a quarter cup and I am going to use that to make my sauce. So I'm going to bind this quarter cup of reserved cooking liquid in this small saucepan and then, I'm going to add my two cloves of minced garlic, the remaining half of my onion, one quarter cup red wine and one cup original barbecue sauce, and the barbecue sauce really adds a great tangy flavor, you can use it as a marinade or a dip for a lot of different recipes.
Barbecue sauce compliments the flavors of hot wings and grilling flavor, such as ribs and chicken. So now, I'm just going to combine my sauce, we'll bring it over to the stove when we finish cooking it. So I'm going to bring my sauce to a boil on high heat. So now that our sauce has come up to a boil, we can turn it down and let it simmer for about 5 minutes, just to get it a little bit more thick, and it'll have a nice caramel consistency.
So I cooked my sauce for 5 minutes on the stove and it's gotten really nice and thick. I've got my oven preheated to 350 degrees, and I'm going to go ahead and pour the sauce over the ribs, so that we can get them ready for baking. Sauces and marinades are great way to boost the flavor of vegetables and meat.
Salad dressing can also be used as marinades. Now I'm just going to cover the ribs with tin foil, and we'll bake these for about 30 minutes or until they are really golden and the meat is cooked through and very tender. And here are your saucy beef short ribs.
