Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.
Classic Apple Crumb Pie
Specialty baker Petra Cox shares her family bakery's traditional Apple Crumb Pie recipe.

Petra Cox: So here we have all of our ingredients for our Apple Crumb Pie. We have 1/3 cup of Pecans, 1/4 cup of cornmeal, 1/2 cup of granulated white sugar, and eighth of a cup of dark brown sugar, pinch of Cinnamon, a half a teaspoon of vanilla, about a cup and an eighth of flour, six tablespoons of butter, and you could use a store-bought crust if you want, and Apple Pie Filling made of York apples, a cup of sugar and tablespoon and a half of Corn Starch.
So first of all, I'm going to put our flour in a food processor, followed by the sugar and brown sugar and a little bit of cinnamon too, cornmeal, and over that I'm going to put that butter, vanilla, and then I'm going to turn the food processor on until the butter is chopped up into the smaller pieces. Pecans, I'll press about a few times.
Into our bottom crust which is frozen, I'm going to put our Pie Filling. I'm just going to pour this over the pie, spread it out, and at this point we can put our pie into a preheated oven and we bake it for 45-60 minutes. So our Apple Crumb Pie is fully baked. The crumb topping gets a nice sort of golden color.
You can see here that the apple juice has bubbled and thickened, and that's an important thing to look for as you pull your pie out of an oven. It sure to be a hit and now people will be asking you for the recipe all the time. Enjoy!
