Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.
Simple Chocolate Chip Cookies
Specialty baker Petra Cox shares her family bakery's traditional Chocolate Chip Cookie recipe.

Petra Cox: Here we're in the kitchen with all the ingredients that we use to make the Chocolate Chip Cookies. Half a pound of unsalted butter, two and a half cups of flour, there is two-thirds a cup of light brown sugar, and then two-thirds a cup of white sugar, two cups of chocolate chunk, a tablespoon of vanilla, a teaspoon of salt, and two eggs. So this is softened butter, brown sugar and white sugar in this bowl.
So you want to be beat those together until it's like a nice creamy texture. All right, so there we're with the nice creamy texture. We can add flour, a little more gradually along with a teaspoon of baking soda. I found that salt really brings out of the flavor of chocolate.
Before the texture gets too thick I'm going to add my vanilla, and the last portion of flour. Mix the chocolate chips in, add eggs. The reason you take it out of the stand mixer before you add the chocolate is because the chocolate will be just too beat up in the stand mixer.
And now it's come together, we're ready to put it on the tray and put it in the oven. We use parchment paper; we put them on the aluminum tray. The tray liner makes for really easy clean up. We use about a tablespoon of the cookie dough to make a cookie. It takes about 15-20 minutes to cook them at 350?
