Javier Quiroga: The dish we're making now is a mixed green salad with sliced strawberries, goat cheese, and caramelized onions. You'd love it, it's awesome! We have your onion here, that's already cleaned, we're going to cut it and we want caramelized onions, so it's not a very strong oniony flavor. Then now we're going to put about 2 tablespoons of oil in your pan, enough to coat the bottom.
I like to squeeze the onions a little bit to release some of the juices. Put them in your saut pan. When we're done with them, this is going to be reduced probably by half, they are going to become sweet actually, and we're going to move to our strawberries now. You want a quarter of these. So we're going to do the same thing to the rest. Yes, I know you'd guess the onions are burning, but they are not. Ah, it looks beautiful, see.
Add about a pinch, a pinch and a half of salt and they will be nice and caramelized in a little while. And then the goat cheese, I personally just like to crumble it with my hand, just like that. The onions; they have been caramelizing now probably for about 5 minutes, that's the kind of color you want for them. You want to make sure that you cool these, you don't want to put them in your salad hot, because then it will melt everything.
We can start plating the salad here, well, we'll get just about a handful mixed greens, I am going to put a few strawberries, a little bit of the caramelized onions, and then we're going to put a little bit of cheese on top. So right before you serve, you want to go ahead and put Balsamic vinaigrette dressing around, a little bit in the middle too. So there you have it, mixed green salads with the goat cheese, caramelized onions, and the strawberries.
