Lisa Wilson: Hi there! I am Lisa Wilson with the Raw Food Institute. I am so happy to be here with you today talking about raw foods. Listen, I have been doing nutritional counseling for many, many years and when I really started bring in the raw foods, it just took people's health to another level. And some people might be watching this and wondering, what are raw foods, because it's so much more than celery and carrots these days.

Raw foods means raw vegetables, raw fruits, sprouts, this is the living foods, the living enzymes, herbs, seeds, nuts, your root vegetables like ginger, celery, garlic, all of these foods put together in a myriad of ways in combination can just take your health to the next level, including the cultured vegetables. So we have got the sauerkraut, back here I have got some beet kvass.

I do want to however talk about the pillars of healing. So when I am working with somebody in healing crises, or if you want to prevent a healing period, there are some pillars of healing and one of those would be green juice therapy. Seriously when I teach green juice therapy, there are lines around the block and people line up to take this class, because it is so important, it is so medicinal and healing for the body. Sprouts, again, the living foods and cultured vegetables. Those are some of the pillars of healing.

I want to move on and talk about the levels of raw, because you might have heard somebody say I am a raw foodist, and there are some things that you can do raw. And you can eat too much, too many of a sweater things, yes, they are considered raw, perhaps a raw honey, even a raw agave nectar, and there is nothing wrong with that frankly for somebody who is not in a healing period or for children. You know my first rule of thumb is eat food without a barcode. So you are really taking those cookies and those bars, mixing it with seeds, the sprouted seeds, nuts, so a much healthier treat but still considered Recreational Raw.

Next step we have sensible raw. Now it's still going to be healthy foods, but our stomach only has the ability to break down foods like vegetables or fruits independently. So, when we start pairing them together in solids, maybe they haven't been paired ideally, but it's still a sensible meal. So you might have a salad or a juice or a smoothie that has been improperly combined, still it's sensible raw but not optimal.

Then we move up to the next level of raw, which is superior raw, and these are going to be your dark leafy green vegetables, the most missing ingredient in the diet on the planet. So your kale, your collards, your swiss chards, your bok choy, all of those are really, really healthy greens.

Then we move up to the top, which is medicinal raw. Now up in medicinal raw, we've got our grasses like wheat grass and barley grass, our sprouts are there, and all of the super foods. Now super foods are going to be foods that are high on the ORAC scale. Well, what's the ORAC scale? The ORAC scale doesn't measure antioxidants because frankly counting calories, not all calories are created equal, but we can now measure antioxidants. So these are going to be the foods, super high in antioxidants Also up in medicinal raw will be your sea vegetables, like your sea vegetables like your dulse, your nori, your kelp, all of those wonderful, thyroid protecting, rich in mineral vegetables.
