Mike Hedrick was born on the banks of the New River on the North Carolina Coast. He grew up on BBQ and Pulled Pork was some of his first solid food. After years of growing up as a country boy camping and cooking Mike began Grilling and Barbecuing. After years of cooking for family and friend Mike began his ongoing passion to make the best barbecue in the world.
In his first season on the National Barbecue Competition Circuit Mike's Pit Pirate BBQ Team had an amazing Three Top 10's and a 3rd Place Overall Pork at the National Capital Barbecue Battle on Pennsylvania Ave., Washington DC. Mike is now the proud Owner/Chef of Pit Pirate BBQ and does Catering from 50 to 500 and also Concession Sales and is currently looking for a Restaurant location.
Knowing that serving is more than food Mike organized "Operation BBQ for Our Troops: Walter Reed and collected up donations and and got other BBQ Teams to come and feed 500 of the wounded Soldiers and their Caregivers. When asked by the Assistant Secretary of Defense Health Affairs why he would go to such efforts Mike said “That sir. Seeing the smiles on their faces…the lord says to go and serve, and BBQ is just what I do.”
Mike is currently the Pit Boss and National Spokesman for Pit Crew Barbeque.

How to Make Carolina BBQ
Ingredients
Dry Rub:
1 cup of Spanish paprika
1/4 cup of kosher salt
1/4 cup of ground black pepper
1/4 cup of sugar
2 tablespoons of garlic granules
2 tablespoons of oregano
2 tablespoons of yellow mustards
2 tablespoons of dark chili powder
Vinegar Sauce:
1 1/2 cups of apple cider vinegar
1/4 cup of brown sugar
1 tablespoon of salt
1 tablespoon of black pepper
Red pepper flakes
Hot sauce
Mop Sauce:
1 cup of chicken broth
1 cup of apple cider vinegar
1 tablespoon of virgin olive oil
1 tablespoon of black pepper
Pulled Pork:
Boston Butt
Dry Rub
Yellow mustard
Vinegar sauce
Beef Brisket:
Beef brisket
Yellow Mustard
Worcestershire sauce
Dry rub
Ribs:
Baby back ribs
Dry rub
Mop sauce
Coleslaw:
1/2 of a cabbage
1 cup of red cabbage
1 cup of chopped up carrots
1/4 cup of green onions
3 tablespoons of apple cider vinegar
2 tablespoons of virgin olive oil
2 tablespoons of sugar
1/4 teaspoon of black pepper
1/4 teaspoon of sea salt
1/4 teaspoon of dry mustard
1/4 teaspoon of celery seed

Mike Hedrick: Hey guys, Mike Hedrick, Pit Pirate Barbeque. Today, it's going to be a great today. We are here in Northern Virginia; sunny, awesome, beautiful day. We are just outside of nation's capital, little bit of south and I am a southern boy so I like that. We are going to be doing some award winning bbq. But, hey, like some most southern boys, I was born down there in the banks of North Carolina. I was raised on bbq, in fact I think pulled pork was just about the first solid meal I've ever had.
We were raised up down there and since then, started with my own bbq business. I have been out on a competition bbq circuit for couple of years and well as you can see, got a couple of top tens and couple of top fives. So, with that said we are just going to get cooking today. We are going to go ahead and make up a pulled pork, we are going to do a beef brisket. We are going to do some baby back ribs, we are going to do coleslaw. We are going to do the whole thing, we are going to get the bbq all plated up for you. Man, I get you going on your summer time eating.
We are going to be working with some knives and cutting boards and some spices and stuff like that. So, you guys just be careful, anytime you are working with knife, be careful, don't need the band-aids out there. Anytime you are working with raw meat, you want to make sure do some food safety. You want to wash up, it sanitizes as often as possible. Anytime, you are working with a hot cooker, like a great Peoria custom cooker back here, you want to make sure that you keep the children away from heat. So, we are getting right go ahead and work on some Carolina bbq.
