Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.
Make Homemade Peanut Butter Cookies

Petra Cox: I am Petra Cox a baker with Mom's Apple Pie Company in Occoquan, Virginia. And today I am showing you how to make our delicious peanut butter cookies.
So here I have all of the ingredients we need for our peanut butter cookies. Two sticks of butter that's already softened, a half cup of granulated white sugar and a half cup of dark brown sugar, two whole eggs, four cups of peanut butter, a teaspoon to a tablespoon of vanilla, three cups of flour that I have sifted before measuring and also a teaspoon of baking soda.
The first thing that we are going to be doing is adding half cup packed dark brown sugar and half cup of granulated, it needs to combine that in the mixer. And so at this point we are going to add our eggs one at a time. You add them one at a time so that you don't add too much liquid at once.
Once that's incorporated you can add your other egg. Now at this point I will add vanilla, you can use anywhere from a teaspoon to a tablespoon, I like it kind of heavy on the vanilla and now I will add peanut butter I am using smooth peanut butter.
Okay, so the peanut butter I am going to add in four additions, just so that I am not adding it all at once so that it gets mixed in gradually. Now we are going to add our flour, which is three cups, and that's been sifted together which is a teaspoon of baking soda. I will add that about a-third of a cup at a time so that it goes in somewhat more gradually.
So at this point we have our dough. I will mix together and then I went ahead and scraped the sides down. What I have here is it's a cookie scoop or an ice-cream scoop, so I am just taking a scoop and put it down on there.
All right, and so the way I remember eating peanut butter cookies when I was little was with the little fork prints in them. So to me that is the classic peanut butter cookie and there is a few other ways to do a peanut butter cookie, smush them down with a kiss and the kiss will bake right into the cookie, don't worry it won't melt and turn them into molten chocolate, it holds its shape.
When you have all of your cookies on your tray, you can then put them in the oven, at about 350 for perhaps around 20 minutes. Enjoy your peanut butter cookies.
