Instructions
<div>1. Warm up the chocolate in the microwave. Cook it at 50% power for three 45 second intervals. Remove the chocolate and stir after each interval.
2. Hold the strawberries by the stems and dip them into the chocolate. You can also roll them in nuts, coconut, candy pieces, etc. Place the strawberries on a sheet of wax paper and put them in the fridge for a couple of minutes.
3. Form a cone out of wax paper in order to decorate the chocolate-covered strawberries.

Rob Kingsbury: Hi! I am Rob Kingsbury with the ACKC Cocoa Bar. Today I am showing you how to dip strawberries. We are doing some tuxedo and wedding gown designs. First of all make sure you get some beautiful strawberries. Right now, we have a beautiful blend of strawberries from California. I have already rinsed these off and so make sure they are really, really dry. First off, what we are going to do just warm these up in the microwave. So when you put this in the microwave, give it a 50% power for 45 seconds. Pull it back out and you are going to give it a stir. Then you are going to put it back in the microwave again for 45 seconds. You are going to take it back out and give it another stir. At this point, you are going to see the chocolate really starting to melt, and become really smooth. So start off with the Tuxedo berry, we first need to get it coated with a little white chocolate. So all you need to do with a Tuxedo berry is dip one side of it. You are going to put that aside and let that set up for a second. So while that's setting up, I am going to come through and we are going to get the wedding gown berry set up. And with this, you want to cover as much of the berry as you can. I will put these in the refrigerator, just for a couple of minutes, just so the chocolate can set up and snap in to place and be nice and firm.
So what we are going to do for the tuxedo strawberry is we are going to dip it in dark chocolate giving it a V shape, but you need to make sure when But you need to make sure when you come in, it's almost like you are kind of shaping it so it looks like a little heart on the top of the berry. Make sure you get as much of the extra chocolate off and then put it back down to set up. So I am going to come in and just put a couple of little dark chocolate buttons on. I am just using a little skewer, anything just to make some little dots down here. And then just to finish it up, I am just going to give it a little bit of a bow-tie. All right, so we finished up with the tuxedo and next I am just going to come in and do the wedding dress. This is where we are going to be able to use our paper cone. What I have is a daily sheet folded in half, so you have a perfect triangle. So at this point, what are going to do is take the two tips on the ends and bring them up to the middle. You are going to curl this over and make the points at the top aligned. And then you are going to take the other side, curl it around and bring it up to the back side. Just take the top points and pull them over couple of times. So you don't have to load up this cone actually with chocolate. Just a few spoonfuls, that's all what we really need. Curl it down and we put little pressure on the tip. We are just going to do a little quick design of some white zigzag just along the bottom of it and then we are going to come back on the other way, give it a bit of the formal look, and then you can come back in and just put some little white dots of chocolate, give the look of a neckline. If you have a real steady hand and you want to do the draggies, feel free, it took a little bit more time. Our wedding strawberries have set up and chilled. They look beautiful. The best part though is the eating. So let's finish that on a good note for myself and for you and I am going to enjoy a beautiful strawberry. Thanks so much!
