Indian Recipes - How to Make Eggplant Raita

Ingredients

1 eggplant
Onion
Tomatoes
Hot pepper
Cilantro
Garlic
Salt
Yogurt
Milk
Sugar

Instructions

1. Roast the eggplant and peel the skin off. Chop off a small piece and dice it.


2. Add chopped onion, chopped tomatoes, hot pepper, cilantro, salt and garlic to the eggplant.


3. Add milk and sugar to yogurt and then add it to the eggplant mixture. Blend well.
