Ingredients
Sugar cookies:
1 stick of unsalted softened butter
1 cup of granulated sugar
1 large egg
1 teaspoon of vanilla extract
2 cups of all purpose flour
1/4 teaspoon of salt
1/2 teaspoon of baking powder
Jolly Ranchers
Gingerbread cookies:
1 stick of unsalted softened butter
1/2 cup of packed dark brown sugar
1 large egg
1/2 cup of dark Black Strap molasses
3 cups of all purpose flour
1/2 teaspoon of baking soda
1/4 teaspoon of baking powder
2 teaspoons of ginger
2 teaspoons of cinnamon
3/4 teaspoon of clove
1/2 teaspoon of black pepper
3/4 teaspoon of salt
2 cups confectioner sugar
1 egg white
Chocolate peppermint cookies:
2 sticks of unsalted softened butter
3/4 cup of granulated sugar
1 large egg yolk
1 teaspoon of vanilla extract
2 cups of all purpose flour
1/2 cup of unsweetened Dutch process cocoa powder
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1 stick of softened unsalted butter
1/2 cup of confectioner sugar
1/2 teaspoon of peppermint extracts

Hi, my name is Nicole Ferrigno. I will be joined today by Elizabeth Evelyn and we are from Paisley Fig Pastry. Today, we are going to show you how to bake and decorate holiday inspired cookies from scratch that are both beautiful and delicious. We will first make a super fun stained glass Christmas tree ornament cookie, then a beautiful, delicate gingerbread snow flake and finally, a chocolate peppermint sandwich cookie. You need a couple of pieces of specialty equipment to complete these really fun cookies including a stand mixer, a rolling pin, a baking sheet, a few shaped cutters including a small, round cutter about the size of an Oreo cookie and a couple of festive holiday cutters such as Christmas trees, snowman or snow flakes. You also need a small offset spatula, a disposable or a reusable pastry bag that s fitted with a pastry tip, either plain or star shaped. So, before we begin a little bit about kitchen safety. When you are working around hot ovens and sharp knives, it s just very, very important to be cautious and aware of what you are doing and clearly, if you are working with small children in the kitchen be sure that they are supervised. Now, a little bit about myself and Lizzy Evelyn of Paisley Fig. We are both professionally trained, we attended L'Academie de Cuisine baking programs so, we have degrees in pastry arts and between us, we have about ten years of experience as a restaurant pastry chef. Now, let s go ahead and get started and dive into our holiday baking.
