Petra is a specialty baker for Mom's Apple Pie Company, a family-run bakery with four locations in Northern Virginia. By the time she was born, the family business had been operating from their home for three years. Petra and her siblings grew up rolling crusts, peeling apples and baking pies with their parents from early on. In addition to bakery experience, Petra trained with family friend, Is Harris, making a variety of Thai cuisine from scratch, punctuating her culinary appreciation for both sweet and savory flavors and techniques. Subsequent training in oenology and cuisine both in Florence, Italy and Washington, DC led to her current position as wine buyer and recipe research and development at Mom's Apple Pie in Occoquan, Virginia.
Blueberry Muffins
Specialty baker Petra Cox breaks down how to make delicious jumbo blueberry muffins!
Blueberry Muffins
Ingredients
6 cups of all purpose flour3 cups of granulated sugar
6 eggs
1 1/4 cups of regular whole milk
3 teaspoons salt
6 teaspoons baking powder
3 sticks of melted butter
6 cups of blueberries
Instructions
1. Mix the dry ingredients together. Add the flour, sugar, baking powder and salt to a bowl.
2. Mix the wet ingredients together. Add the eggs, milk, butter and vanilla to the bowl, combining the wet and dry ingredients.
3. Pour the blueberries into the batter and use the folding process to prevent crushing the berries.
4. Fill muffin cups about 2/3 with batter and put the muffin tin in the oven for 25 minutes at 350 degrees. Remove the muffins from the muffin tin after they have cooled and serve.

! I am Petra Cox from Moms Apple Pie Company in Occoquan Virginia, where our family run bakery and we have been doing this for over 26 years. We make excellent pies and breads, as well as muffins and other baked goods.
So, today we are going to make blueberry muffins and here are all the ingredients we need to make those. We are going to use six cups of all purpose flour thats the regular flour, you find in grocery store. Three cups of granulated sugar, and six eggs, a cup an a quarter of regular whole milk, three teaspoons salt, and six teaspoons baking powder, three sticks of melted better and we are going to bake a dozen of a jumbo muffins. We have a jumbo muffin or cupcake tin here, bind with muffins cups.
You can have the recipe and do it with the standard size muffins cups or you can use two dozen muffins cup trays of the standard smaller size. So, those are all the ingredients we need for our blueberry muffins and lets get started.

Hi Petra, You can't imagine how much i have learned from watching your video's. My dream has been to be a pastry chef very late in my life. I have attempted many times to make muffins (specially blueberry) and have been unsuccessful. (i am being kind to myself) However, i made this recipe and followed all your instructions and they came out fantastic. My daughter and husband thought that I was fibbing they actually went to the garbage can outside to check where i had purchased them. Very proudl
