Prepare and Cook Weiner Schnitzel

Ingredients

2-3 ounces of pork or veal cutlet
Salt
Pepper
All-purpose flour
1 egg per cutlet
Japanese breadcrumbs

Instructions

1. Season the cutlets with salt and pepper. Put them in flour and then in the egg wash and then in the breadcrumbs.


2. Saute the cutlets in vegetable or olive oil. Panfry them golden brown on both sides. It will take a couple of minutes to cook them on each side.


3. Serve with vegetables and garden greens.

My name is Raymond Steiger and today we are going to make Weiner Schnitzel and we use pork cutlets. Each one has about maybe two-and-a-half to three ounces. Its thin slices and we pound it a little bit to make it nice and tender. So, we put a little bit salt on it, season it, a little bit of black pepper and then first one we put in the flour, just toss it a little bit. Then we put it in the egg wash, then we put it breadcrumbs. What we use here in the restaurant, we use the Japanese breadcrumbs, what make the veal a little bit more crispy, or the pork, or even the seafood makes a little bit more crispy and it does not absorb as much oil like if you just use the regular breadcrumbs, and thats it. Then, thats one, then the second one we do the same thing. We just put in the flour, toss it a little bit, put it in the egg wash, just let the egg drain off a little bit and then in the breadcrumbs. Just push it in a little bit, so that the breadcrumbs stay nice and firm on the meat. The next step, its going to be were just going to saut it off or pan fry it in vegetable oil or olive oil. What I use here is olive oil. Then you just panfry it nice and golden brown on both sides and it only takes like maybe two - three minutes on each side. So just put one in, and the second one and it makes it nice and crispy if the oil is nice and hot nice and golden brown, so all the juice stays inside in the meat and it seals it up really good. This one is a favorite dish in Austria, we call it Weiner Schnitzel and its served in most restaurants or every home at least once a week for the family. You can serve it with -- here were going to serve it with salad, green salad, potato salad, or potato pancakes.

So, its a very done quick meal, it takes only couple of minutes to cook on each side, to prepare in a couple of minutes. So in five or ten minutes when you have everything ready to go, you can have your lunch or your dinner ready to go. So, you dont have to stay all day in the kitchen. Add a little bit more oil, okay, thats it, thats ready to go. So, you have two pieces of meat and you can serve it with fresh slice of lemon on the side and thats it. The Weiner Schnitzel breaded or pork cutlet is ready.
