Cooking the Crab Cakes
Ingredients
1 pound of Crab meat1/2 teaspoon of dijon mustard
A pinch of old bay seasoning
2 tablepsoons of mayonnaise
1/2 teaspoon of chopped parsley
Fresh lemon juice
1/2 teaspoon of Worcestershire sauce
1 egg
2 tablepsoons of diced white toast
1 tablespoon breadcrumbs
Salt
Instructions
1. Mix the mayonnaise, Old Bay, dijon mustard, parsley, egg, Worcestershire sauce, white breadcrumbs and diced white toast together. Fold the crabmeat in so that the meat isn't broken up. Add a little bit of lemon and a few more breadcrumbs and then put it into the refrigerator for one day.
2. Take four tablespoons of the crab meat and sprinkle a few more breadcrumbs on it, forming it into a cake. Cook it in a pan for two minutes on each side, or until it's golden brown. then bake it in the oven at 350-375 degrees for 5 or 6 minutes.
3. Plate the crab cakes and serve with mixed greens.

My name is Raymond Steiger and now we are going to shape the crab cake, what we mixed before for, and cook it all slowly. So we take about maybe like, four tablespoon of crabmeat and we can sprinkle it a little bit with a little bit of breadcrumbs, so it doesn't stick in the skillet. Then we just put it in the pan and cook it on each side nice and golden brown. It takes about two minutes maybe on each side to cook it nice and slowly. So be sure it's nicely cooked all the way through. and at home you can cook it on each side a little bit till it's golden brown and then bake it maybe for five or six minutes in the oven, with 350 or 375 odd degrees. Then just be sure when you take it out, just lay that at the side a little bit so the oil comes off or the butter what we used. We use olive oil, or you can use regular vegetable oil just to cook it off, or if you don't want to put it in the pan, then you just can put it on the cookie sheet and put it in the oven and bake it about for 10-12 minutes. This one is almost done, so it's just nice and golden brown, yeah, that's about the color it should have here.
This one too, you can make like all the little patties after you mix up the crabmeat, you can form and shape all your patties already, put it in a refrigerator so then you are ready to have a party or lunch or dinner at in your house, then you just have to take it out and make it right then. So it doesn't take too long when you have a company over to stay in the kitchen and cook it, so it comes really quickly. Okay this one is ready to go, so we are going to start serving it and just going to make a little bit salad for it, and that's it for this one.
