German Recipes - Potato Pancakes
Ingredients
1 potatoA pinch of salt
Black pepper
Parsley
1/2 tablespoon of cornstarch
1 egg yolk
Instructions
1. Shred a potato and add salt, black pepper, chopped parsley, cornstarch and an egg yolk. Mix the ingredients together.
2. Saute the potato mixture in a pan with oil. Take 3 tablespoons of the mixture and form patties and make sure they are sauted golden brown on each side.
3. Plate and serve with sour cream or apple sauce.

My mother used to make potato pancakes like this. The only recipe of her's that I have been unable to duplicate!
