Hi, Im Lisa Wilson, Certified Health Counselor in Northern Virginia and Founder of Nourished LLC. Were making fun finger food for kids for our play date today. So, Ive been working on these artichokes. Ive already cleaned both of them, and this one I trimmed. Now, if youre not used to working with artichokes, theyre pretty prickly, they have these tips, much like a rose. So, what I like to do is -- you just go ahead and cut the top off, which I have already done, cut the base off, so that when I serve them to the kids, theyre really pretty, once theyre steamed theyre going to open up like that.
So, what Im going to do is just go ahead and just finish clipping these. I like to take my kitchen shears and just go all the way around, makes it real simple. Because you dont want to eat these, you definitely will get a little prick. All the way around. Some people think that artichokes are just for gourmet dinner, but this is really fun finger food for kid. So, right now Im going to take both of these, go ahead and pop them in my steamer, and then Im going to come back and show you the dressing.
So, I already have my water nice and hot, and you can just set them right in your pot, on the side, lid back on. Then while I am here, I am going to go ahead and grab my clarified butter right here, take it on over and add it to my lemon juice. Im going to go ahead and pour that right in my lemon juice. I have about a half a cup, maybe three quarters cup clarified butter, and I have a half a cup lemon juice. So, what Im going to do is go ahead and give that a stir, this is the sauce. The kids will just go ahead and dip the artichokes right into the clarified butter and the lemon juice and its delicious. So, a little sea salt on top when its all done, little clarified butter, and a little lemon juice, and I really think the kids are going to enjoy it. So, lets move on to more finger food.
