Sugar glazed pecans are a quick and easy snack that you can prepare ahead of time and give your guests something festive to munch on over drinks. First preheat your oven to 250 degrees. Next, separate four egg whites. Then coat two baking pans with nonstick spray. In a large bowl, whisk the egg whites. Add half a cup of champagne or ginger ale for effervescence. Two teaspoons of salt, two teaspoons of cinnamon and one teaspoon of ground ginger. Next, add two cups of sugar and eight cups of pecans. Fold until the nuts are evenly coated. Spread the mixture out into the baking pans. Bake at 250 degrees for one to one and half hours. Stirring occasionally to prevent sticking. Baking the nuts will help release the natural oils and enhance their flavor. The nuts are ready when the coating is absorbed and the pecans appear dry. If the nuts are still warm, separate them with two forks and if cooled use your fingers. Use say pecans, I say pecans. Either way, your guests will beg you for the recipe.
