Corn is always been a part of the American harvest menu, Corn-Pudding is extra special. Pre-heat your oven to 325 degrees. In a food processor, add one small onion and one bag of frozen corn. Pulse until the corn is broken but not pureed, scraping the side of the bowl if necessary. Next, add two cups of milk, two eggs and process just until blended. Add eight-and-half ounces or one box of muffin mix and a half teaspoon of salt, then pour the mixture into greased 11 3/4 x 7 1/2-inch baking dish. Bake in a 325 degree oven for 45-50 minutes until the outside crust is golden brown. To add some extra flavor, sprinkle the top with cheese and garnish with fresh cut scallions.
