Host: Homemade, handmade poppy seed dinner rolls are amazing, made with all natural ingredients. The warming smell alone will fill your holiday kitchen with love. With this recipe, you can totally resist the urge to reach for those popping ones on the super market shelf. First, dissolve two envelopes of quick rising dry yeast and a quarter teaspoon of sugar in warm water in mixer bowl and let it stand until the mixture is slightly foamy. Add two-thirds of a cup of milk, a quarter cup of oil, one egg, a third of a cup of sugar and a tablespoon of poppy seeds. Add a pinch of salt, mix well until everything is combined, about 30 seconds. Gradually add one cup of flour to the batter and mix it until it is smooth for about one minute. Stop to scrape the bowl. Now, combine four cups of flour and two sticks of chilled butter and cut this until the mixture resembles a coarse meal. Now, to the mixer with the dough hook attached, turn to speed two and mix until the dry ingredients are incorporated. Knead on speed two until smooth, about 2 minutes longer adding up to a third of a cup of flour more if the dough remains sticky. Remove the bowl from the mixer and cover with a towel. Let it rise in a warm place for 30 minutes or until the dough nearly doubles in size. Now, coat two 12 cup muffin tins with non-stick cooking spray or butter. Turn the dough onto a floured surface and knead for about four minutes until the dough is smooth and elastic. Divide the dough into four equal portions. Place one portion on the floured surface; refrigerate the remaining portions. Roll the dough out to a 12X12X8th of an inch rectangle, cut the dough lengthwise into six two inch strips. Stack the strips to form six layers. Cut the stacks into six equal portions about two inch squares. Place each stack on their edge, cut side down in the prepared muffin cups. Let the dough rise in a warm place for 30 minutes or until it nearly doubles in size. After it has risen, preheat your oven to 350 degrees. Flush the tops of the rose of melted butter, sprinkle with poppy seeds and bake for 25 minutes in the oven. Serve warm with a little butter and honey and you will be crowned queen bee of this meal.
