Holiday pumpkin bread is a perfect treat. In a medium bowl, stir together one and a half cups of flour, one teaspoon of baking soda, a teaspoon of pumpkin pie spice, a quarter teaspoon of baking powder and a half teaspoon of salt. Combine a third a cup of raisins and a third cup of chopped pecans, stir in one tablespoon of the flour mixture and set aside. In a large bowl at medium speed beat together a quarter cup of butter and a cup of sugar until light and fluffy, beat in three eggs, one cup of canned pumpkin, a quarter cup of orange juice and a half teaspoon of vanilla until well blended. Add remaining dry mixture to the pumpkin mixture and beat at low speed until thoroughly blended. Stir in the reserved pecans and raisins, grease nine by five by three inch melt pan and pour in the batter. Bake in a pre-heated 350 degree oven until lightly brown, about 60-70 minutes. Serve this pumpkin bread with your holiday meal and try it toasted for breakfast. Go to www.
