These Cranberry Cornish- Hens are the perfect size to serve individually to each of your guests. In a heavy two quart sauce pan combine a can of jellied cranberry sauce, with a half a cup of dry white wine and two tablespoons of lemon juice. You will want to use canned sauce because of its smooth consistency. Cook over medium heat, stirring constantly until the cranberry sauce melts and the mixture smooth. Rinse the hens in cold water and pat dry. Sprinkle the cavities with salt and pepper, add a few rosemary sprigs, now close the cavities and secure with wooden toothpicks. Place the hens, breast side up in a lightly greased shallow pan, next, brush the hens with the cranberry mixture coating all sides, season with salt and pepper. Bake at 350 degrees for 45 minutes, basting frequently with the cranberry sauce, serve the hens drizzled with an extra spoonful sauce.
