Bread pudding is very popular in the British Isles; add this delicious Apple Raisin Bread pudding to your holiday table this year. Start by peeling and chopping two medium apples. In a medium sauce pan over a medium heat, melt two tablespoons of butter, stir in the chopped apples, stirring occasionally until slightly soft about five to seven minutes. In the same sauce pan that you cooked the apples, add three cups of day-old bread cubes and half-a-cup of raisins. Lightly toss them together. In a medium bowl, beat together four eggs, two cups of milk, a third a cup of sugar and three quarters of a teaspoon of pumpkin pie spice. Add the apple mixture to one-and a-half quart casserole and pour the milk mixture over it. you can cook this immediately or cover and refrigerate for upto one day for cooking. Bake in a pre-heated 350 degree oven for 45-55 minutes. Leave the top off for the last 20 minutes to get a nice golden crust, serve hot, warm or chilled garnished with whipped cream and powdered sugar.
