Caesar Salad Dressing Part 1
Ingredients
1 egg
Oil
1 teaspoon of Dijon mustard
A dash of Worcestershire sauce
Lime or lemon juice
1 clove of garlic
1/4 cup of parmesan cheese
1 head of romaine lettuce
1 teaspoon of anchovy paste
1/2 cup of crumbled bacon
Croutons
Instructions
1. To make the Caesar salad dressing, separate the yolk of one egg and put it into a shallow bowl. Add the dijon mustard and blend together to form a paste. Drizzle canola oil lightly as you whisk. When you have about half a cup of dressing, add lemon or lime juice and mix. Add the anchovy paste and a dash of Worcestershire sauce. Add the crushed clove of garlic, parmesan cheese and crumbled bacon.
2. Wash the romaine lettuce and use a salad spinner to chop it into bite size pieces. Take out the salad and incorporate it into the dressing, a little at a time. Mix it well, add croutons to the top, plate and serve.
