Caesar Salad - Finishing Touches

Ingredients

1 egg
Oil
1 teaspoon of Dijon mustard
A dash of Worcestershire sauce
Lime or lemon juice
1 clove of garlic
1/4 cup of parmesan cheese
1 head of romaine lettuce
1 teaspoon of anchovy paste
1/2 cup of crumbled bacon
croutons

Instructions

1. To make the Caesar salad dressing, separate the yolk of one egg and put it into a shallow bowl. Add the dijon mustard and blend together to form a paste. Drizzle canola oil lightly as you whisk. When you have about half a cup of dressing, add lemon or lime juice and mix. Add the anchovy paste and a dash of Worcestershire sauce. Add the crushed clove of garlic, parmesan cheese and crumbled bacon.


2. Wash the romaine lettuce and use a salad spinner to chop it into bite size pieces. Take out the salad and incorporate it into the dressing, a little at a time. Mix it well, add croutons to the top, plate and serve.

Hello, I am Robert Nassar from Dinner Done. Today, we are making a Caesar salad. This video is going to show you how to put it all together. You got a notice that Ive got these white latex gloves on, and the reason for that is when we put the salad with the dressing together, I would like to mix it all by hand and your guests might feel lot more comfortable if you did it with gloves on as opposed to your bare hands. And for some of you, you just might be more comfortable doing it this way. By all means, if you dont want to use your hands, use a spoon and a fork and mix it the regular way.

What we are going to start out with is romaine lettuce. Now, romaine lettuce is the standard lettuce for Caesar salad. You can definitely use your standard iceberg lettuce if youd like, thats fine, but true Caesar salad is always been made with fresh romaine lettuce. You need to wash your lettuce very well, as it is a vegetable that grows very close to the ground and always has sand and grit in it and you definitely dont want that to be a part of your awesome Caesar salad. So, to start off with, take your knife and cut the bottoms off of your heads of romaine lettuce and then using a salad spinner you can break the lettuce with your hands into bite-sized pieces like so. The reason we dont use a knife is you dont want to get the lettuce to turn brown or oxidized, as it can happen a few minutes after youve used the knife on it. Once youve got your lettuce cut in the bite-sized chunks, you are going to take this basket and run it through cold running water, make sure that you get all the sand and all the grit and all the bad stuff out of there. Bring it back from the sink and put it in your spinner. If you dont have a salad spinner, go ahead and lay your pieces of romaine lettuce right onto a dry towel, paper towel, cloth towel. The trick here and its very important is that the lettuce be as dry as possible. Go ahead and give it a couple of good spins until all the water has been expelled. Once that has been done, you are going to take your lettuce, and incorporate it into the dressing that we made in the previous clip. Take it a bit at a time, no need to go overboard and if you are going to use your hands, go ahead and run that lettuce all through that dressing. Make sure that it gets covered well. Which is why I like to use my hands because thats a pretty thick dressing weve got going there folks. Now, we get the rest of the lettuce in there. Again, mix it well and once its very well covered, its time to serve. This is not a salad that you want to leave sitting around in the fridge. This is one of those that you make on the spot and serve it at the dinner table right away. The way to finish our salad off; take a little bit of grated parmesan cheese, and just sprinkle it on top to taste or if you would like to, you can serve a little bit of it on your dinner table and let your guests or your family put as much or as little as they want, and then get some good quality croutons, toss those on top, and now youve got the makings of a great Caesar salad.
