Speaker: What are carbohydrates?

Kathy Reily: Carbohydrates are any type of food that essentially grow from the ground. So any type of food that grows below the ground grows on top of the ground, no matter how we process that food, that is a carbohydrate and almost all the carbohydrates we eat will turn into sugar. Examples of carbohydrates would be things like grains, wheat, rye, oats, corn and rice, any type of food we make from these grains such as bread, pasta, crackers, cereals, tortillas, we do eat corn. We make things from corn milk, cornbread, corn tortillas, oats, breads, cereals, how we eat rice and use rice flour in different products. Other carbohydrates would also be vegetables, fruits, sweets and also milk and yogurt are included in the carbohydrate grouping.
