How to Make a Traditional Irish Beef Stew

Ingredients

Beef tenderloin tips
1 onion
2 carrots
3 leeks
3 sticks of celery
8 potatoes
1 cup of flour
2 quarts of beef stock
Salt
Pepper
Garlic
Bouquet garni made of bay leaves and parsley
Thyme

Instructions

1. Dice up the meat and start braising it. Braise it in a hot skillet pan and season it with salt, pepper and roasted garlic.

2. Prepare the vegetables. Rinse the onions, carrots, leeks and celery under cold water and then chop and dice them up.

3. Wash and cut the potatoes. Add them to the stew when the beef is tender.

4. Start transferring the braised beef tenderloin tips to the stew pot on the stove at medium heat. Add beef stock and flour and mix. Make sure you cook out the flour.

5. Add the vegtables to the stew.  Add the bouquet garni and fresh thyme. Let it cook for 30 minutes before adding the potatoes. After the potatoes are added, let it boil for another 10-15 minutes.
